Bake puff pastry

Preheat oven to 400°F (200°C). Line a baking sheet with parchment. Unfold each puff pastry sheet and roll lightly to even thickness. Trim into 9x3-inch rectangles (or 3 square layers per sheet). Prick each piece all over with a fork to reduce excessive puffing. Place another sheet of parchment and a second baking tray on top to weigh them down (or use baking beans). Bake 12–15 minutes until golden and crisp. Remove weight for last 2 minutes if you want extra color. Cool on a rack. When fully cooled, reserve.

Make salted brown sugar crumble

Reduce oven to 350°F (175°C). In a bowl, rub cold cubed butter into flour and brown sugar with salt until coarse crumbs form (pea-size). Spread on a small baking sheet and bake 10–12 minutes, stirring halfway, until fragrant and slightly crisp. Cool completely; the crumble will harden. Break into small pieces.

Bloom gelatin (optional)

If using gelatin, sprinkle gelatin over 2 tbs cold water, let stand 5 minutes to bloom.

Make pastry cream base

In a medium saucepan, combine milk and heavy cream. Split the vanilla bean, scrape seeds into the milk, and add the pod (or add vanilla extract later). Heat until just simmering, then remove from heat. In a bowl, whisk egg yolks with granulated sugar until pale, then whisk in cornstarch until smooth. Slowly temper the hot milk into the yolk mixture in a thin stream, whisking constantly. Return mixture to the saucepan and cook over medium-low heat, whisking, until it thickens and comes to a gentle boil (about 1–2 minutes). Remove from heat, discard vanilla pod.

Finish diplomat

If using gelatin, stir bloomed gelatin into the hot pastry cream until dissolved. Stir in butter and sea salt until smooth. Transfer to a clean bowl, cover surface with plastic wrap to prevent a skin, and chill until cold (about 1–2 hours). Before assembly, fold in lightly whipped cream (1 cup) gently to create a light diplomat cream. Taste and adjust salt to a balance between sweet and salted.

Mango Salsa

Combine diced mango, red bell pepper, minced red onion, jalapeño, cilantro, and lime juice in a bowl. Season with 1/4 tsp sea salt and mix gently. Taste and adjust lime or salt. Refrigerate until assembly so flavors meld. Drain any excess liquid before using to prevent sogginess.

Mint Cream

Place the heavy cream and mint leaves in a blender or use an immersion blender; blitz briefly to infuse (10–15 seconds). Strain the cream through a fine sieve to remove leaves. Chill the infused cream if necessary, then whip to soft peaks with confectioners' sugar. Keep chilled until assembly.

Passion Fruit Caramel Sauce

Make caramel

In a heavy-bottomed saucepan, combine 2 tbs water and 3/4 cup granulated sugar. Over medium heat, without stirring, swirl the pan occasionally until the sugar melts and turns a deep amber color (watch closely to avoid burning). When color is achieved, remove from heat and carefully whisk in cold butter until combined.

Finish sauce with passion fruit

Slowly add warm heavy cream while whisking (mixture will bubble). Return to low heat briefly to combine, then stir in passion fruit pulp and 1/4 tsp sea salt. Taste and adjust for sweetness/acidity. Cool to warm or room temperature; sauce will thicken as it cools. If seeds are undesired, strain before adding to caramel.

Mango Yogurt Ice Cream (No-churn)

In a bowl, whisk Greek yogurt, mango purée, sweetened condensed milk, and vanilla until smooth. Transfer to a small loaf pan or container and freeze until firm, about 4–6 hours. Stir once after 1–2 hours to break ice crystals for a smoother texture if desired. Keep frozen until plating.

Assembly & Plating

Cut puff pastry layers to final desired shape if not already trimmed. Place one pastry layer on the plate. Pipe or spoon a generous layer (about 3–4 tbs) of salted vanilla diplomat cream evenly over the pastry. Sprinkle a small amount of the salted brown sugar crumble over the cream for texture. Spoon a scant tablespoon of mango salsa in a line or small mound on top of the cream.

Add second puff pastry layer and repeat: diplomat cream, a few pieces of crumble, and a smaller spoon of mango salsa. Top with final puff pastry layer. Dust the top lightly with confectioners' sugar and scatter remaining crumble pieces.

On the plate beside the mille feuille, place a quenelle or small scoop (1–2 tbs) of mango yogurt ice cream. Drizzle passion fruit caramel sauce artistically over the plate and a small amount over the top of the mille feuille. Spoon a small dot (about 1 tsp) of extra passion fruit pulp for freshness.

Pipe or dot mint cream (using a small piping bag) in two or three spots for color and mint aroma. Garnish with fresh mint sprigs. Serve immediately so pastry stays crisp; provide extra passion fruit caramel on the side if desired.
