Chill glass and prepare garnishes

Place a highball or Collins glass in the freezer for 5–10 minutes or fill with ice and water to chill while you assemble ingredients. Cut a fresh lime wheel and a long orange peel. If using cucumber, slice a very thin ribbon with a peeler. Strip a few leaves from the thyme/rosemary and set aside one sprig for garnish.

Build the drink

Discard the chilling ice/water from the glass (if used). Fill the chilled glass with large ice cubes or a single large sphere to slow dilution.

Pour 2 oz Empress 0.0 Indigo over the ice.

Add 0.5 oz fresh lime juice to lift the botanicals and brighten the citrus notes of the Empress Indigo.

Gently pour 4 oz tonic water down the side of the glass to preserve carbonation and create a clear layer. Stir once gently with a bar spoon (3–4 slow turns) to integrate the spirit, lime and tonic without flattening the bubbles.

If using bitters, add 1 dash now and gently stir once more.

Garnish & finish

Express the orange peel over the drink by holding it over the glass (outer peel facing down) and giving it a quick twist to release the oils, then rub the peel around the rim and drop it into the drink.

Add the lime wheel on the rim or float it on top. Tuck the cucumber ribbon inside the glass against the ice for a subtle fresh note if using. Garnish with the thyme or rosemary sprig by lightly clapping it between your hands to release aromatics and placing it on top.

Serve immediately with a short straw. Sip and enjoy the botanical, citrus-forward profile of the Empress 0.0 with bright tonic lift.
