Sushi rice

Rinse the rice in a fine-mesh sieve or bowl under cold running water, swirling with your hand, until the water runs nearly clear (about 4–6 rinses). Drain 10–15 minutes.

Combine rinsed rice and 480 ml water in a rice cooker or medium pot. If using a pot, bring to a boil over medium-high, then reduce to low, cover, and simmer 12–14 minutes. Remove from heat and let rest, covered, 10 minutes.

While rice cooks, mix rice vinegar, sugar, and salt in a small bowl until sugar dissolves. Warm slightly if needed to dissolve sugar completely.

Transfer hot rice to a shallow wooden or nonreactive bowl (hangiri or wide bowl). Gently fold the seasoned vinegar into the rice with a rice paddle or spatula using cutting-and-fanning motions to separate grains and cool to near body temperature (about 5–8 minutes). Do not mash. Keep covered with a damp towel until assembly.

Negitoro (tuna mix)

If you purchased whole tuna, ensure it is sashimi-grade and very cold. Pat pieces dry with paper towel and, on a clean board, finely chop the tuna until a loose paste forms (traditional negitoro is minced belly; you can pulse briefly in a food processor in short bursts). Aim for a silky, slightly chunky paste.

Place minced tuna in a chilled bowl. Add light soy sauce, mirin, sesame oil, wasabi (if using), and fine salt. Gently fold to combine without overworking—taste and adjust seasoning (add a little more soy for saltiness or a pinch more wasabi for heat).

Fold in 3 sliced green onion stalks (reserve 1 stalk for garnish) and most of the sliced shiso (reserve some for garnish). Keep the negitoro cold until ready to assemble; do not leave out at room temperature for more than 15–20 minutes.

Toppings & garnishes

Heat 1 teaspoon neutral oil in a small skillet over medium heat. Add thinly sliced shiitake mushrooms and sauté 2–3 minutes until softened. Add 1/2 teaspoon light soy sauce and cook another 30–45 seconds. Remove from heat and let cool slightly.

Toast nori sheets briefly over an open flame or dry skillet until crisp, or use pre-toasted nori. Cut into thin strips (kizami nori) or small rectangles for scattering.

Thinly slice remaining green onion and reserved shiso into fine garnishes. Have toasted sesame seeds and pickled ginger ready.

Assembly & serving

Portion rice

Divide the prepared sushi rice between four bowls (about 2 cups cooked total rice; roughly 1/2 cup cooked rice per serving as a base for negitoro). Wet hands slightly to prevent sticking if shaping.

Top with negitoro

Spoon an even amount of the negitoro mixture over each rice portion (about 75 g negitoro per serving). Gently spread it to cover the rice surface.

Add toppings

Arrange sautéed shiitake on top or to the side of each bowl. Scatter nori strips, remaining sliced green onion, and slivered shiso over the negitoro. Sprinkle with toasted sesame seeds. Add a small mound of pickled ginger to the side if desired.

Finish & condiments

Serve immediately with small dishes of soy sauce and optional shichimi/togarashi. Diners may add a light drizzle of soy or a pinch of shichimi. Consume promptly since this uses raw tuna.
