Build and shake

Chill a coupe or highball by filling it with ice or placing in the freezer. In a cocktail shaker, add the gin, elderflower liqueur, fresh lemon juice, simple syrup and two dashes of angostura bitters. Add ice (about 4–6 cubes) to the shaker and shake vigorously for 10–12 seconds until well chilled.

Strain

Discard ice from the chilled glass. Double-strain the shaken mixture into the chilled coupe (for a sparkling wine finish) or into a rocks glass over fresh ice (for a longer drink). Use a fine mesh strainer if available to remove small ice shards and pulp.

Top with sparkle

Gently top the cocktail with 2 oz sparkling water for a lighter effervescence or 2 oz brut sparkling wine for a richer, drier finish. Pour slowly over the back of a spoon or down the side of the glass to preserve carbonation and create a pleasant layering of bubbles.

Garnish & Finish

Express the lemon twist or lightly squeeze the lemon wheel over the drink to release oils, then rub the rim of the glass with the peel and drop it into the cocktail or perch the wheel on the rim.

Gently slap the mint sprig between your palms once to release its aroma and place it on top of the drink as a garnish. Serve immediately.
