Method
Butler Steak (Aburi-style)
Bring steak to room temperature
Remove the steak from the refrigerator 30–45 minutes before cooking. Pat dry with paper towel to remove surface moisture—this helps achieve a good sear.
Season
Generously season both sides with the Kosher salt and freshly ground black pepper. Press seasoning into the meat so it adheres.
Sear and baste (pan method)
Heat a heavy skillet (cast iron preferred) over high heat until smoking. Add neutral oil and swirl. Place the steak in the pan and sear undisturbed for 1.5–2 minutes until a deep brown crust forms. Flip and sear the second side 1.5–2 minutes. Reduce heat to medium, add butter, crushed garlic and thyme. Tilt the pan and continuously spoon (baste) the melted butter and aromatics over the steak for about 1–2 minutes to develop flavor.
Aburi finish (optional blowtorch)
For an aburi (flame-torched) finish, transfer the seared steak to a heatproof tray and briefly torch the top surface with a culinary blowtorch until lightly charred and caramelized (20–40 seconds), moving continuously to avoid burning. If you don't have a torch, finish in a 500°F (260°C) oven for 2–3 minutes to reach medium-rare, adjusting time for desired doneness.
Rest and slice
Transfer steak to a cutting board and loosely tent with foil. Rest for 6–8 minutes to allow juices to redistribute. Slice against the grain into 1/4-inch slices and arrange on the bento.
Wasabi Chimichurri
Combine parsley, cilantro, oregano (or dried), minced garlic, rice vinegar, lemon juice, extra-virgin olive oil, wasabi paste, salt and black pepper in a small bowl. Stir or pulse briefly in a mini food processor to emulsify while keeping some texture. Taste and adjust wasabi for desired heat. Chill until ready to serve. Spoon a tablespoon alongside or drizzle lightly over sliced steak.
Roasted Market Vegetables
Roast
Spread vegetables in a single layer and roast for 15–20 minutes, stirring once halfway, until tender and lightly caramelized at the edges. Remove from oven and keep warm until plating.
Gomoku Rice (Japanese mixed rice)
Rinse and combine
Rinse the sushi rice under cold water until water runs clear. Drain well. Place rice in a rice cooker or pot and add the measured water and dashi (or broth).
Cook with mix-ins
Mix carrot dice and sliced shiitake into the rice. Add soy sauce, mirin, sesame oil and salt; stir gently to distribute. Cook according to your rice cooker instructions or bring to a simmer covered on the stovetop, then reduce heat to low and steam 12–15 minutes until tender. Let sit covered 10 minutes off heat.
Finish
Fold in frozen peas while rice is hot to warm through. Fluff with a rice paddle or fork and portion into the bento box.
Seasonal Salad
Toss mixed greens, cucumber slices and cherry tomatoes lightly with the sesame-soy vinaigrette just before assembling the bento to prevent wilting. Dress to taste (about 1 tablespoon for this portion).
House Pickles
Quick-pickle
In a small bowl, whisk rice vinegar, sugar and salt until dissolved. Add thinly sliced cucumber (and optional daikon) and toss to coat. Let sit 10–15 minutes at room temperature or refrigerate up to 2 hours. Drain excess liquid before plating.
Garnish / Finish
Arrange sliced aburi steak, a scoop of gomoku rice, roasted market vegetables, dressed seasonal salad and house pickles in separate compartments of a bento box or on a plate. Spoon 1–2 tablespoons of wasabi chimichurri over or alongside the steak. Finish with microgreens or scallions and a lemon wedge. Serve immediately.
