Preparation
Prepare the Slaw
In a large bowl, combine shredded cabbage, carrots, mayonnaise, lemon juice, hot sauce, salt, and pepper. Mix well and set aside in the refrigerator to chill.
Prepare the Fish
In a shallow dish, combine flour, cornmeal, cajun seasoning, salt, and pepper. In another bowl, whisk together eggs and buttermilk. Dip each fish fillet first into the egg mixture, then dredge in the flour mixture until well coated.
Fry the Fish
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated fish fillets. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Assemble the Sandwich
Place a fried fish fillet on the bottom half of each sandwich bun. Top with a generous amount of house made slaw and cover with the top half of the bun. Serve immediately with house chips on the side.
