Steak & Marinade
Prepare steak
Pat the tenderloin cubes dry with paper towels. Place in a small bowl.
Add 1 tablespoon olive oil, Worcestershire sauce, minced garlic and freshly ground black pepper. Toss to coat evenly and let marinate at room temperature for 10 minutes (or refrigerate up to 30 minutes).
Seasoning
Vegetable
Heat a large skillet or cast-iron pan over medium-high heat. Add remaining 1 tablespoon olive oil. When oil shimmers, add the mushrooms or onions in a single layer. Sear without stirring for 1–2 minutes to develop color, then stir and cook until browned and softened, about 3–4 minutes total. Season vegetables lightly with 1/4 tsp salt while cooking. Remove vegetables from pan and set aside on a plate.
Cook Steak Bites
Increase heat to high. Add the marinated, seasoned steak bites to the hot pan in a single layer, working in batches if necessary to avoid crowding. Sear undisturbed for 1–2 minutes to form a brown crust, then flip and sear the other sides for an additional 1–2 minutes. Total cook time should be about 3–5 minutes depending on cube size and desired doneness (medium-rare to medium).
If using multiple batches, transfer cooked steak bites to the plate with vegetables.
Finish & Serve
Reduce heat to medium-low. Return all steak bites and vegetables to the pan. Add 1 tablespoon unsalted butter and let it melt, tossing everything to coat and form a light pan sauce, about 30–45 seconds.
Taste and adjust seasoning with up to 3/4 tsp additional salt if needed. Sprinkle chopped fresh parsley and squeeze optional lemon wedge over the bites just before serving.
Transfer to a warm appetizer plate and serve immediately. Offer extra Cajun or steak seasoning at the table if desired.
