Juice and Measure
Juice fresh lemons and measure 0.5 oz (approx. 15 ml) of strained lemon juice. Measure 1 oz gin and 0.5 oz agave syrup.
Add the gin, fresh lemon juice, and agave syrup into a cocktail shaker filled about two-thirds with ice.
Shake vigorously for 10–15 seconds until the shaker is very cold and slightly frosted. This chills and dilutes the mixture properly.
Double-strain the shaken contents into a chilled champagne flute (use a Hawthorne strainer and a fine mesh strainer or pour through a fine sieve) to remove small ice shards and any pulp.
Champagne Flute / Garnish
Top the strained cocktail with 3 oz chilled champagne or sparkling wine. Pour gently to preserve bubbles.
Serve immediately while the champagne is effervescent.
