Method
Taco Salad Base
Wash and dry the lettuce. In a large bowl combine shredded iceberg and chopped romaine. Add halved cherry tomatoes, sliced red onion, corn, and rinsed black beans. Toss gently to combine.
Stir in shredded cheddar and pickled jalapeños (if using). Reserve chilled until ready to assemble.
Seasoned Taco Beef (or protein)
Cook beef
Heat a large skillet over medium-high heat. Add 1 tsp olive oil and 1/2 cup diced yellow onion; sauté 2–3 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant.
Add 1 lb ground beef to the skillet. Break up with a spoon and cook 5–7 minutes until browned with no pink remaining.
Stir in chili powder, ground cumin, smoked paprika, dried oregano, kosher salt, and black pepper. Add 1 tbsp tomato paste and 1/4 cup beef broth (or water). Mix well, reduce heat to medium-low, and simmer 3–4 minutes until the mixture is saucy and slightly thickened. Taste and adjust salt/pepper as needed. Remove from heat and set aside to cool slightly.
Creamy Cilantro-Lime Dressing
In a small bowl or blender, combine 1/2 cup Greek yogurt, 1/4 cup mayonnaise, 1/4 cup packed fresh cilantro, 2 tbsp lime juice, 1 tsp honey, 1 minced garlic clove, 1/4 tsp ground cumin, 1/2 tsp salt, and 1/4 tsp black pepper.
Whisk (or blend) until smooth. If the dressing is too thick, add up to 2 tbsp water, 1 tbsp at a time, until it reaches a pourable consistency. Taste and adjust lime, salt, or sweetness.
