For the fries (start first)

Preheat and prepare potatoes

Preheat the oven to 425°F (220°C). Wash and peel the Russet potatoes if desired (peel optional). Cut into 1/4–1/2-inch sticks for classic fries. Rinse cut fries under cold water until water runs clear to remove surface starch.

Dry and coat

Thoroughly dry the fries on a clean kitchen towel or paper towels. Place dried fries in a large bowl. Toss with 1 tsp cornstarch until evenly dusted. Add 2 tablespoons vegetable oil, 1 tsp kosher salt, 1/2 tsp black pepper, and 1/2 tsp paprika (if using). Toss until evenly coated.

Arrange and bake

Spread fries in a single layer on a rimmed baking sheet lined with parchment or lightly oiled. Do not overcrowd — use two pans if necessary. Bake on the top rack at 425°F (220°C) for 20 minutes, then flip fries and bake another 10–12 minutes until golden and crisp. For extra crispness, switch to broil for 1–2 minutes watching carefully.

Finish

When fries are done, remove from oven and immediately season with an additional pinch of kosher salt to taste. Keep warm in a low oven (200°F / 95°C) while you cook the burgers.

For the cheeseburgers

Portion and season the patties

Divide 1 lb ground beef into 4 equal portions (~4 oz each). Gently form each portion into a patty about 3.5 inches (9 cm) wide and 1/2 inch thick, making a slight depression in the center of each patty with your thumb to prevent doming. Season both sides of each patty with 1/4 tsp salt and a pinch of black pepper, then sprinkle a light pinch of garlic powder and onion powder on each side (totaling the amounts in ingredients).

Heat the pan or griddle

Heat a cast-iron skillet or heavy griddle over medium-high heat until very hot. Add 1 tablespoon vegetable oil and swirl to coat. The pan should be smoking slightly when ready.

Cook the patties

Place the patties onto the hot surface, leaving space between them. Cook undisturbed for 3–4 minutes until a brown crust forms. Flip the patties and immediately place one slice of American cheese on each patty. Cook another 2–3 minutes for medium doneness (adjust time for desired doneness). If you prefer the cheese melted faster, cover the pan with a lid for 30–60 seconds after adding the cheese.

Toast buns and assemble

While the patties finish, spread softened butter on the cut sides of the 4 buns. Place buns butter-side down in a separate skillet over medium heat or on a griddle and toast until golden, about 1 minute. To assemble each cheeseburger: spread about 1/2 tablespoon mustard and 1/2 tablespoon ketchup on the bottom bun, add a lettuce leaf, set the cheeseburger patty on the lettuce, top with 2 pickle slices and a few red onion rings, then crown with the top bun. Repeat for all burgers.

Optional sauce/finish

If using hot sauce or cheese sauce, drizzle or spoon on top of the patty before placing the top bun, or serve on the side for dipping fries.

To serve

Plate each cheeseburger with a generous portion of fries. Serve immediately while hot with extra ketchup, mustard, or the optional cheese sauce. Leftover fries may be reheated in a 400°F (200°C) oven for 5–7 minutes to refresh crispness.
