Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Add Tomatoes and Broth

Stir in the canned tomatoes with their juice and the vegetable broth. Bring the mixture to a simmer and let it cook for about 15 minutes to allow the flavors to meld.

Blend the Soup

Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the mixture to a blender and puree in batches.

Return the blended soup to the pot (if you used a blender). Stir in the chopped basil and heavy cream. Season with salt and black pepper to taste. Heat the soup over low heat until warmed through, about 5 minutes.
