Method
Prepare Noodles
Cook the Noodles
Bring 1 liter of water to a boil in a medium pot. Add 200 grams of dry rice noodles and cook according to package instructions, usually around 4-6 minutes until tender.
Drain and Rinse
Once cooked, drain the noodles in a colander and rinse under cold running water to stop the cooking process and cool the noodles.
Make Savory Sauce
Combine Sauce Ingredients
In a bowl, whisk together 4 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of rice vinegar, 1 teaspoon of honey or sugar, minced garlic, minced ginger, and chili flakes until well combined.
Add Green Onions
Stir in 2 tablespoons of chopped green onions into the sauce mixture.
Assemble the Dish
Combine Noodles and Sauce
Place the cooled noodles in a large mixing bowl and pour the savory sauce over them. Toss gently to coat the noodles evenly with the sauce.
Add Toppings
Top the noodles with optional toppings like julienned cucumber, julienned carrot, sesame seeds, and halved boiled eggs for added flavor and texture.
Serve
