    Prepare yogurt

    Spoon 2 cups of chilled full-fat Greek-style yogurt into a medium mixing bowl. Stir gently until smooth but still thick; avoid over-whisking so the yogurt keeps a creamy texture.

    Sweeten and flavor

    Add 3 tablespoons Kythira Island thyme honey to the yogurt. If using, add 1/2 teaspoon vanilla extract and 1/2 teaspoon fresh lemon zest. Fold ingredients together with a rubber spatula until evenly incorporated. Taste and adjust honey to preference (add up to 1 more tablespoon if you prefer sweeter).

Topping — Walnuts

    Place a small skillet over medium heat. Add 1 teaspoon unsalted butter or neutral oil and swirl to coat. Add 1/2 cup walnuts and toast, stirring frequently, for 3–5 minutes, until fragrant and lightly browned at the edges. Watch closely to prevent burning.

    Season walnuts

    Remove walnuts from heat and immediately sprinkle 1/4 teaspoon coarse sea salt over them while still warm. Toss to distribute the salt and allow to cool slightly; cooling will make them crisper.

Finish & Serve

    Assemble serving

    Divide the honey-sweetened yogurt between two bowls or jars (about 1 cup yogurt per serving).

    Top and drizzle

    Evenly sprinkle the toasted, salted walnuts over the yogurt. Drizzle about 1 tablespoon additional Kythira Island thyme honey over each bowl (or divide the tablespoon between the two).

    Garnish and serve

    If using, tuck a couple of fresh mint or thyme leaves on top for color and aroma. Serve immediately so the walnuts remain crisp. Leftover yogurt can be stored covered in the refrigerator for up to 3 days; keep walnuts separate and add just before serving to maintain crunch.
