Prepare cabbage
Remove any tough outer leaves from the cabbage. Cut the cabbage into quarters, remove the core, and very thinly slice the quarters crosswise to yield about 4 cups of thinly sliced cabbage. Transfer to a large mixing bowl.

Prepare orange segments
Using a sharp knife, cut away top and bottom of the orange, then slice away the peel and white pith. Hold the orange over the bowl and cut between the membranes to release segments (supremes). Collect about 1 cup of segments and any juices—reserve the juices for the dressing.

Prepare Manchego and dill
Thinly shave or slice Manchego cheese into small ribbons or shards (about 1 cup). Finely chop fresh dill so you have about 2 tablespoons. If using, very thinly slice a small amount of red onion (about 1 tablespoon) and add to the cabbage bowl.

Assemble salad
Add the Manchego, chopped dill, and orange segments to the bowl with the cabbage. Gently toss to combine just before dressing so the orange segments remain intact.
Dressing

In a small jar or bowl, combine the white balsamic vinegar (1.5 tbs), fresh orange juice (1 tbs or any reserved juices), Dijon mustard (1/2 tsp), and honey (1/2 tsp). Whisk or shake until blended.

Slowly stream in the extra virgin olive oil (3 tbs) while whisking vigorously to create an emulsion. Season with sea salt (1/2 tsp) and freshly ground black pepper (1/4 tsp). Taste and adjust seasoning: add a pinch more salt or up to 1/2 teaspoon more honey if you prefer sweeter, or another 1/2 teaspoon vinegar if you prefer brighter acidity.

If the dressing thickens in the jar, give it a quick shake; if separated, whisk again briefly before using.

Dress the salad: pour about 2 to 3 tablespoons of dressing over the salad (reserve any extra dressing) and gently toss until cabbage, Manchego, dill, and oranges are lightly coated. Taste and add more dressing if needed—aim for a light coating that brightens flavors without saturating the cabbage.

Plate or transfer to a serving bowl. If desired, garnish with a few additional dill sprigs, a light sprinkle of shaved Manchego, and a grind or two of black pepper. Serve immediately.
