Prepare shrimp
Rinse the New Caledonia blue shrimp under cold water and pat dry thoroughly with paper towels. If not already done, peel and devein the shrimp, leaving tails on if you prefer a nicer presentation. Place the shrimp in a medium bowl and season with 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper; toss to coat evenly.

Make marinade
In a small bowl, whisk together 3 tablespoons extra-virgin olive oil, 2 tablespoons fresh lemon juice, 3 minced garlic cloves, 2 tablespoons finely chopped fresh parsley, 1 teaspoon smoked paprika, 1/4 teaspoon red pepper flakes, and 1 teaspoon honey or agave (if using). Taste and adjust salt or lemon if needed.

Marinate shrimp
Pour the marinade over the seasoned shrimp and toss gently to coat every piece. Cover the bowl and refrigerate for 15–30 minutes (no more than 1 hour) to allow flavor to penetrate. Do not exceed 1 hour to avoid the acid starting to 'cook' the shrimp and altering texture.

Grill shrimp
Place the shrimp directly on the hot grill or in the grill basket. Grill for 2–3 minutes per side, flipping once, until the shrimp are opaque, firm, and have light grill marks. Total cook time should be 4–6 minutes depending on shrimp size. If you used honey in the marinade, watch closely to avoid flare-ups or burning from sugars.

Rest and garnish
Transfer the grilled shrimp to a warm plate and let rest for 1–2 minutes. Sprinkle with the reserved 1 tablespoon chopped fresh parsley and serve with lemon wedges. Squeeze fresh lemon over the shrimp just before eating.
