Light Citrus-Honey Dressing

Wash and dry fruit
Rinse all fruit under cold running water. Place berries and grapes in a colander to drain and gently pat dry with a clean kitchen towel or paper towels. Dry fruit helps the dressing stick and prevents dilution.

Hull and slice strawberries
Remove green tops from strawberries and slice large berries in halves or quarters so pieces are roughly bite-sized (about 1/2 inch pieces).

Prep grapes and blueberries
Trim any stems from grapes and leave whole or halve large grapes. Keep blueberries whole.

Slice stone fruit
Halve the peach or nectarine, remove the pit, and slice into 1/4-inch wedges or bite-sized chunks.

Prevent apple/pear browning
Core the apple and pear and cut into 1/2-inch cubes. To slow browning, toss the apple and pear pieces immediately with 1/2 tablespoon of the lemon juice from the dressing (reserve remaining lemon juice for the dressing).

Assemble fruit
Combine strawberries, grapes, blueberries, peach/nectarine slices, and apple and pear pieces in a large mixing bowl. Gently toss to mix without crushing delicate berries.

Add mint (optional)
Chiffonade or finely slice the mint leaves and sprinkle over the fruit if using. Toss lightly to distribute.
Light Citrus-Honey Dressing

Make dressing
In a small bowl or jar, whisk together the remaining 1.5 tablespoons lemon juice (since 0.5 tbs was used to toss apple/pear), 2 tablespoons orange juice, 1 tablespoon honey, 1 teaspoon extra-virgin olive oil, 1/2 teaspoon lemon zest, a pinch of sea salt, and a pinch of freshly ground black pepper until honey is dissolved and the dressing is emulsified.

Taste and adjust
Taste the dressing and adjust sweetness or acidity as needed — add up to 1/2 teaspoon more honey for sweetness or a few drops more lemon/orange juice for brightness. The dressing should be light and complementary, not overpowering.

Dress the fruit
Pour the dressing over the assembled fruit and gently toss with a large spoon or salad servers to coat evenly. Use a light hand to avoid crushing berries.

Chill or serve
Refrigerate the dressed fruit for 15–30 minutes if you prefer it chilled and to let flavors meld. Alternatively, serve immediately at cool room temperature. Garnish with a few whole mint leaves if desired.
