    If not already cleaned, remove head, innards, quill, and skin from squid. Rinse tubes and tentacles under cold water. Pat dry thoroughly with paper towels. Slice tubes crosswise into 1/2" rings; leave tentacles whole if small.

    Place the cut calamari in a bowl and pour the milk or buttermilk over it. Toss to coat, cover, and refrigerate for 15–30 minutes. This helps tenderize and removes slight seafood odor.

    Remove calamari from milk and let drain in a colander for 5 minutes. Pat dry again with paper towels — coating adheres best to dry surface.

Breading / Coating

    In a shallow bowl or rimmed plate, combine the all-purpose flour, semolina or cornmeal (if using), salt, black pepper, garlic powder, paprika, and cayenne. Whisk or stir until evenly distributed.

    Working in a single layer (do not overcrowd), dredge the drained, patted-dry calamari rings and tentacles in the seasoned flour mixture. Toss gently to coat all sides, then shake off excess. Transfer coated pieces to a wire rack or tray while you heat the oil. Keep the coating loose — a light, even coating fries crispest.

Frying

    Pour oil into a heavy-bottomed pot or deep skillet to a depth of about 1.5–2 inches (roughly 3–4 cups depending on vessel). Attach a thermometer and heat the oil to 350–365°F (175–185°C). If you don’t have a thermometer, test with a small pinch of flour — it should sizzle and brown within ~30–45 seconds.

    When oil reaches temperature, fry calamari in small batches (6–8 pieces per batch depending on pan size) so oil temperature remains steady and pieces don’t stick together. Gently lower coated rings into the oil using a slotted spoon or spider.

    Fry each batch for 1.5–2.5 minutes, stirring gently, until golden and crisp. Do not overcook: calamari cooks very quickly — brief frying retains tenderness. If pieces are thicker, aim for the higher end of time; thin rings may only need 1–1.5 minutes.

    Use a slotted spoon to transfer fried calamari to a paper towel–lined tray or wire rack set over a sheet pan to drain. Immediately season with a light sprinkle of salt while still hot.

    Allow oil to return to 350–365°F between batches. Continue until all calamari are cooked. For best texture, serve immediately while hot and crisp.

Dipping Sauce (optional)

    Quick lemon-garlic mayo

    In a small bowl, whisk together the mayonnaise, lemon juice, minced garlic, hot sauce (if using), salt, and pepper until smooth. Taste and adjust lemon, salt, or hot sauce. Chill until ready to serve.
