Calamari and Marinade

    Rinse the squid rings and tentacles under cold water and pat dry thoroughly with paper towels. Excess moisture prevents proper crisping.

    Place the dried squid in a bowl. Add the buttermilk, lemon juice, kosher salt, and black pepper. Toss to coat, cover, and refrigerate for 15–30 minutes. This light marinade tenderizes and adds flavor; do not exceed 1 hour for delicate texture.

Breading

    While the squid marinates, combine the all-purpose flour, cornmeal, salt, white pepper, paprika, and garlic powder in a shallow wide bowl or rimmed baking sheet. Whisk to distribute spices evenly.

    Set a wire rack over a sheet pan for finished fried calamari to drain and stay crisp. Place a plate or second tray near the breading station for dredged rings.

Frying

    Pour 2 cups of oil into a heavy-bottomed skillet or deep pot. Heat over medium-high until the oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a pinch of flour into the oil — it should sizzle immediately and brown slowly.

    Remove the squid from the buttermilk marinade, letting excess drip off, then transfer to the flour-cornmeal mixture. Toss gently to coat each piece thoroughly, then shake off excess flour and place on the prepared plate. Do not overcrowd — work in batches of about 4–6 ounces at a time.

    Carefully lower a single batch into the hot oil using a slotted spoon or spider. Fry for 1.5–2 minutes, stirring gently, until golden brown and crisp. Rings cook very quickly; avoid overcooking to prevent rubbery texture.

    Use a slotted spoon to transfer the fried calamari to the wire rack to drain. Sprinkle lightly with coarse or flaky salt while still hot. Repeat with remaining squid, allowing oil to return to temperature between batches.

Finish and Serve

    When all batches are cooked, toss the fried calamari lightly with chopped parsley to distribute flavor and color.

    Arrange calamari on a serving platter with lemon wedges and a small bowl of tartar sauce or marinara on the side for dipping. Serve immediately while hot and crisp.
