Prep

Finely dice the onion and celery, mince the garlic, grate the carrot, tear the basil leaves, chop the parsley, and measure out spices and liquids so everything is ready to add at the appropriate time.

Sauté aromatics

Heat a medium saucepan over medium heat. Add the extra-virgin olive oil and let it warm for 30 seconds. Add the diced onion, grated carrot, and diced celery. Cook, stirring occasionally, until the vegetables are soft and the onion is translucent, about 6–8 minutes.

Add garlic and spices

Stir in the minced garlic and cook for 30–45 seconds until fragrant. Add the tomato paste, smoked paprika, ground cumin, red pepper flakes, and dried oregano. Cook, stirring constantly, for 1–2 minutes to bloom the spices and deepen the tomato paste flavor.

Deglaze and combine

Pour in the cup of stock and use a wooden spoon to scrape any browned bits from the bottom of the pan. Add the canned crushed tomatoes, bay leaf, brown sugar (or honey), salt, and black pepper. Stir to combine.

Simmer

Bring the sauce to a gentle simmer, then reduce heat to low. Partially cover the pan and let the sauce simmer gently for 25–35 minutes, stirring every 5–7 minutes to prevent sticking, until it thickens to your desired consistency. Taste and adjust seasoning as needed.

Finish and balance

Remove the bay leaf. Stir in the torn basil leaves, chopped parsley, and the lemon juice or red wine vinegar to brighten the sauce. If using, swirl in 1 tablespoon of butter to add silkiness. Taste and adjust salt, pepper, or a pinch more sugar if the tomatoes are too acidic.

Blend or leave chunky (optional)

If you prefer a smoother sauce, use an immersion blender directly in the pot to purée to the desired texture, or transfer in batches to a blender and purée, then return to the pan and reheat briefly. If leaving chunky, simply serve as is.

Serve or store

Use immediately with pasta, meatballs, braises, or as a base for soups. To store, cool to room temperature, transfer to airtight containers and refrigerate for up to 4 days or freeze for up to 3 months. Reheat gently on the stovetop, adding a splash of stock or water if too thick.
