Marinate seafood

In a medium bowl combine 1.5 tbs extra-virgin olive oil, 1 tbs lemon juice, minced garlic, 1/2 tsp kosher salt and 1/4 tsp black pepper. Add shrimp and scallops (if using) and toss to coat. Let sit 10 minutes while you prepare other ingredients.

Cook shrimp and scallops

Heat a large nonstick skillet over medium-high heat. Add a small drizzle (about 1 tsp) of olive oil. Add shrimp in a single layer and sear 1.5-2 minutes per side until opaque and just cooked; remove to a plate. If using scallops, sear 1.5-2 minutes per side in the same pan until golden and opaque. Keep warm.

Dress crab

Gently toss lump crab meat with a light pinch of salt, a squeeze of lemon (about 1 tsp) and a small drizzle (1 tsp) of olive oil. Set aside chilled or at room temperature.

Greens & Vegetables

Place 6 cups mixed salad greens in a large platter or bowl. Arrange halved cherry tomatoes, cucumber slices, diced avocado, halved hard-boiled eggs and thinly sliced red onion in rows or sections over the greens so each portion will have a variety of components.

Scatter chopped bacon and crumbled blue cheese (if using) over the arranged vegetables.

Dressing

Whisk together 1/2 cup mayonnaise, 1/4 cup Greek yogurt, 1 tsp Dijon mustard, 1 tbs red wine vinegar, 1 tsp lemon zest, 1 tbs lemon juice, 1/2 tsp Worcestershire sauce and 2 dashes hot sauce (optional) until smooth. Season with 1/4 tsp salt and 1/4 tsp black pepper. Taste and adjust acidity or seasoning as desired.

If you prefer a thinner dressing, whisk in 1-2 tbs cold water until you reach desired consistency.

Assemble & Serve

Arrange the cooked shrimp, seared scallops and dressed crab along the rows of vegetables on the platter so each protein has its own section.

Drizzle the dressing lightly over the salad or serve it on the side. Sprinkle chopped fresh chives over the top for color and finish with an additional grind of black pepper.

Serve immediately so the seafood is warm and the avocado remains fresh. Leftovers can be kept refrigerated (dressing separate) for up to 24 hours.
