Toss with oil and seasonings
In a large mixing bowl, combine the olive oil and melted (or softened) butter. Add the minced garlic, thyme, chopped rosemary, kosher salt, and black pepper. Add the mushrooms and toss thoroughly so each piece is evenly coated. Make sure mushrooms are in a single layer after tossing to ensure even roasting.
Arrange on sheet pan
Spread the mushrooms in a single layer on a rimmed baking sheet or in a shallow roasting pan, cap-side up or down (either is fine). Avoid crowding; leave small gaps between pieces. If you have more than one sheet, roast on the middle rack, rotating halfway through for even color.
Roast
Roast in the preheated 425°F (220°C) oven for 15–22 minutes, stirring or shaking the pan once halfway through. Roast until mushrooms are deep golden-brown at the edges and have released and mostly reabsorbed their moisture. Smaller mushrooms will finish faster (about 15 minutes); larger pieces may need up to 22 minutes.
Garnish and serve
Transfer mushrooms to a serving bowl or platter. Sprinkle chopped fresh parsley over the top. Serve warm as a side dish, on crostini, tossed with pasta, or over grilled meat.
