In a large chilled pitcher (2–3 L capacity), pour 1 L sparkling wine or prosecco and 500 ml chilled still wine. Stir gently to combine without flattening the bubbles.

Combine wine base

Add 250 ml strained passion fruit juice, 120 ml simple syrup, and 30 ml fresh lemon juice to the pitcher. Stir gently until evenly mixed. Taste and adjust sweetness with additional simple syrup if needed (add by 15–30 ml increments).

Add fruit and sweetener

Place the pitcher in the refrigerator to keep cold while you prepare the bellini slush. The wine base should be chilled but not frozen.

Working in a blender, add 250 ml peach purée, 300 g ice, 30 ml vodka (optional), and 1/2 tbs lemon zest. Blend on high until smooth and slushy. Transfer to a chilled container and repeat with the remaining peach purée and ice to yield roughly 1 L of slush total.

Prepare slush in batches

If the slush becomes too thin, add more ice and pulse briefly. If it's too stiff, add up to 30 ml water or a splash of additional peach purée to adjust texture. Keep slush in the freezer for up to 20 minutes before serving so it stays firm but scoopable.

Just before serving, spoon the peach bellini slush into the chilled wine pitcher. Add about 400–600 ml of slush depending on desired slush-to-wine ratio (for a brighter slush presence use 600 ml; for lighter, use 400 ml). Gently fold the slush into the wine mixture with a long spoon to create a slushy, bellini-style texture throughout the pitcher. Do not over-stir or you will lose more carbonation.

Combine slush with pitcher

Float thin peach slices and the pulp from 2 passion fruits on top of the pitcher. Tuck 6 mint sprigs around the rim or into the mixture for aroma. If desired, lightly zest a bit more lemon over the top.

Add fresh fruit and garnish

Serve immediately in chilled glasses, using a slotted spoon or ladle to distribute slush and liquid so each glass gets some slushy texture and fruit. Keeps well for about 30–45 minutes on ice; after that the slush will fully melt and dilute the wine.
