Toast pistachios and prepare dry mix

Preheat the oven to 425°F (220°C). Spread the shelled pistachios in a single layer on a baking sheet and toast in the oven for 5–7 minutes until fragrant and lightly golden—watch carefully to avoid burning. Let cool slightly.

Pulse to coarse crumbs

Transfer the toasted pistachios to a food processor. Pulse 6–8 times until coarsely chopped; you want a mix of small pieces and crumbs, not a paste. Transfer to a bowl.

Combine crust ingredients

To the bowl with pistachios add panko breadcrumbs, grated Parmesan, chopped parsley, lemon zest, kosher salt, and black pepper. Stir to combine and break up any large clumps so the mixture is evenly distributed.

Make binding dressing

In a small bowl whisk together the Dijon mustard, extra-virgin olive oil, and honey (if using). This will act as the binder to help the crust adhere to the salmon while adding flavor. Taste and adjust salt/pepper if needed.

Combine binder with dry mix

Pour the mustard–oil mixture over the pistachio breadcrumb mixture and toss until moistened evenly. The mixture should hold together slightly when pressed but remain crumbly. If too dry add up to 1 tsp more olive oil; if too wet add a tablespoon more panko.

Prepare salmon

Pat salmon fillets very dry with paper towels. Place skin-side down on a baking sheet lined with parchment paper or a lightly oiled roasting pan. Brush the flesh lightly with 1 tablespoon olive oil and season evenly with 1/2 tsp salt and 1/4 tsp black pepper.

Add Dijon layer

Spread a thin layer (about 1/2 tsp) of Dijon mustard across the top of each salmon fillet—this helps the pistachio mixture adhere and adds a bright flavor note.

Press pistachio crust onto fillets

Spoon the pistachio–panko mixture evenly over the top of each fillet (about 1/4 cup per fillet depending on size). Gently press the mixture down with the back of a spoon or your fingers so it adheres to the mustard-coated surface into a compact crust.

Roast the salmon

Place the baking sheet in the preheated 425°F (220°C) oven. Roast for 10–14 minutes, depending on fillet thickness: thinner 6–8 oz fillets need about 10 minutes, thicker 8–10 oz fillets need up to 14 minutes. The crust should be golden and the salmon should flake easily with a fork; internal temperature should reach 125–130°F (52–54°C) for medium (carryover will raise it).

Optional broil for extra color

If the crust isn't as browned as you like, switch the oven to broil on high for 1–2 minutes, watching closely so the pistachios do not burn.

Rest and serve

Remove salmon from the oven and let rest for 3 minutes. Transfer each fillet to plates, garnish with microgreens or chopped chives if desired, drizzle with a little olive or lemon-infused oil, and serve with lemon wedges on the side.

Optional Serving Garnish

Scatter microgreens or chives over the plated salmon and finish with a light drizzle of extra-virgin olive oil or lemon oil for brightness. Serve immediately.
