Prepare glass and mint

Select a highball or Collins glass. Reserve a small mint sprig for garnish. Put the remaining mint leaves into the glass.

Add citrus and sweetener

Cut 1 lime into quarters. Squeeze the quarters into the glass to release juice, then drop the squeezed pieces in. Add the fresh lime juice (30 ml) and simple syrup (20 ml) on top of the mint and lime pieces.

Muddle gently

Using a muddler or the back of a wooden spoon, gently press and twist about 8–10 times to bruise the mint and release oils, and to extract flavor from the lime peels. Avoid tearing the mint into tiny pieces — you want fragrant leaves, not shredded herbs.

Build the Drink

Add ice

Fill the glass about three-quarters full with crushed ice (approximately 1 cup).

Choose flavor and add

For a Classic Non-Alc Mojito: do not add additional juice; proceed to top with soda. For a Passion Fruit Mojito: add 30 ml passion fruit puree to the glass and gently stir once to incorporate.

Top with soda

Slowly pour 120 ml club soda or sparkling water over the ice to preserve effervescence. Stir gently 4–6 times with a bar spoon to evenly distribute flavors without flattening the soda.

Garnish & Serve

Taste and adjust: if you prefer sweeter, add another 5–10 ml simple syrup; if brighter, add a few drops of lime juice. Garnish with the reserved mint sprig and a lime wheel on the rim. Serve with a straw and enjoy immediately while cold and fizzy.
