Prepare glass and mint
Place a sturdy highball or Collins glass on your work surface. Add the fresh mint leaves (10 leaves) to the glass. If the leaves are large, lightly clap them between your hands first to release oils, then add.
Muddle mint with sugar and lime
Add the granulated sugar (2 tsp) and fresh lime juice (0.75 oz) to the glass with the mint. Using a muddler (or the back of a wooden spoon), gently press and twist about 6–8 times — just enough to bruise the mint and dissolve the sugar into the lime juice. Avoid over-muddling, which can release bitter chlorophyll.
Add ice and soda
Fill the glass with crushed ice up to near the top (about 1 cup). Slowly pour the soda water (3 oz) over the ice to lightly lift the mint and integrate the flavors. Gently stir once or twice from bottom to top to combine — do not over-stir, to preserve fizz.
Garnish and serve
Top with a lime wedge or wheel and a fresh mint sprig. Optionally slap the mint sprig once between your palms to release aromatics before placing it in the drink. Serve immediately with a straw or stirring stick.
