Chicken Wings
Prep the wings
Pat the wings dry with paper towels. Trim any excess skin and remove tips if not already removed. Place wings in a large bowl.
Season wings with 1 tablespoon kosher salt and 1 teaspoon freshly ground black pepper. Toss to coat evenly and let sit 15–20 minutes at room temperature (or refrigerate up to 2 hours) to allow seasoning to penetrate.
Dry Rub & Coating
In a small bowl combine paprika, garlic powder, onion powder, cayenne, and brown sugar. Sprinkle the dry rub over the seasoned wings and toss so all pieces have a light coating.
In a shallow bowl mix the flour and cornstarch. Dredge each wing in the flour mixture, shaking off excess. The thin coating helps create a crisp crust when fried.
Frying/Finishing
Heat oil in a heavy-bottomed pot or deep fryer to 350°F (175°C). If you don't have a thermometer, test by dipping a wooden spoon handle into the oil — it should bubble steadily around the handle.
Fry wings in batches (do not crowd) for 8–10 minutes per batch, turning occasionally, until golden brown and an instant-read thermometer inserted into the thickest part reads 165–170°F (74–77°C). Adjust time if wings are particularly large. Remove wings to a wire rack set over a baking sheet to drain and keep warm while you finish remaining batches.
M Sauce
Stir in the hot sauce, honey, soy sauce, and rice vinegar. Whisk to combine and simmer gently for 2–3 minutes so flavors meld and the sauce slightly thickens. Taste and adjust seasoning with additional honey for sweetness, or a pinch more cayenne for heat. Finish by whisking in 1/2 teaspoon freshly ground black pepper.
Keep the sauce warm on the lowest heat, stirring occasionally.
Coating & Serve
Transfer wings to a platter. Garnish with chopped parsley or green onions and a sprinkle of sesame seeds if using. Serve immediately with celery sticks and your choice of blue cheese or ranch dressing.
