Rinse and soak rice
Place 2 cups basmati rice in a fine-mesh sieve and rinse under cold running water, gently rubbing the grains until the water runs clear (about 1–2 minutes). Transfer rice to a bowl and cover with cold water; soak 20–30 minutes. Drain thoroughly.
Measure cooking liquid
Measure 2 1/4 cups water and 1 tsp salt and set aside. Using slightly less than 1.125 cups water per cup of soaked basmati produces fluffy separate grains; you may adjust by 1–2 tablespoons based on your rice brand.

Bloom whole spices
In a medium heavy-bottomed saucepan with a tight-fitting lid, heat 2 tablespoons ghee (or oil) over medium heat until shimmering. Add 1 tsp cumin seeds and fry 20–30 seconds until they begin to sizzle and smell nutty. Add 4 green cardamom pods (lightly crushed), 3 whole cloves, 6 black peppercorns, 1 bay leaf, and a 1-inch cinnamon stick. Stir for 20–30 seconds to bloom the spices; be careful not to burn.
Sauté aromatics
Add 1 tablespoon minced fresh ginger and 1 teaspoon minced garlic and sauté 30–45 seconds until fragrant. If using 1 green chili, slit it lengthwise and add now, sautéing 20 seconds to release heat. Do not brown the garlic.
Toast rice with spices
Add the drained basmati rice to the saucepan and gently stir to coat the grains in the spiced ghee. Toast the rice over medium heat, stirring frequently, for 1–2 minutes until some grains become slightly opaque and fragrant (this helps keep grains separate).
Combine with water
Carefully pour the measured 2 1/4 cups water into the pan (it may hiss). Stir once to combine and bring to a gentle boil over medium-high heat.
Simmer gently
As soon as the liquid reaches a steady simmer, reduce heat to the lowest setting and cover the pan tightly with a lid. Cook undisturbed for 12–15 minutes until the water is absorbed and rice is tender. Avoid lifting the lid during this time.
Steam off heat
Turn off the heat and let the rice rest, covered, for 8–10 minutes to finish steaming. This step ensures evenly cooked, fluffy grains.
Finishes & Garnish
Stir in 1 tablespoon butter if using, 2 tablespoons chopped fresh cilantro, 2 tablespoons toasted or fried cashews (if using), and 1 teaspoon lemon zest (or a squeeze of lemon juice) to brighten the flavor. Adjust salt to taste.
Serve hot as a fragrant side to curries, grilled proteins, or dals. Keeps in the fridge for up to 3 days; reheat with a splash of water and a cover to restore moisture.
