Waffle Batter
Preheat and prepare
Preheat your waffle iron according to the manufacturer's instructions. If using an electric waffle maker, allow it to reach full temperature (indicator light on). Lightly brush or spray the plates with a thin layer of neutral oil or nonstick spray just before cooking each waffle.
Combine dry ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly distributed and there are no lumps.
Mix wet ingredients
In a separate bowl or large measuring cup, beat the eggs lightly, then whisk in the whole milk, melted unsalted butter (cooled slightly), and vanilla extract until combined.
Combine wet and dry
Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined. Do not overmix — a few small lumps are fine. If you prefer a tangier, slightly thicker batter, substitute up to 1 cup of the milk with buttermilk (see optional mix-ins).
Rest the batter
Let the batter rest for 5–10 minutes at room temperature. This allows the baking powder to activate and the gluten to relax, giving lighter, crisper waffles.

If using mix-ins like mini chocolate chips or blueberries, gently fold them into the batter just before cooking. Use about 1/2 cup mix-in per batch (adjust to preference).
Cook the waffles
Once the waffle iron is hot, ladle or pour the recommended amount of batter for your iron (typically 1/2 to 3/4 cup per waffle for standard irons) onto the center of the lower plate. Close the lid and cook until the waffle is golden brown and crisp — usually 3–6 minutes depending on your iron. Avoid opening too early. Carefully remove the waffle with a heatproof spatula or tongs.
Keep warm
If making multiple waffles, keep finished waffles warm and crisp in a single layer on a baking sheet in a 200°F (95°C) oven for up to 20–30 minutes. Avoid stacking directly to keep them from steaming and becoming soggy.

Before each waffle, quickly wipe the plates with a lightly oiled paper towel or spray a small amount of nonstick spray to prevent sticking. Use 2 teaspoons of oil per several waffles as needed; do not over-oil.
