1

Chill glass

If possible, place a highball or Collins glass in the freezer for 5–10 minutes beforehand or fill it with ice and cold water while you prepare ingredients to thoroughly chill the glass.

2

Prepare lime

Roll the half lime on the countertop under your palm to loosen the juices. Cut the half lime into a wheel or wedge. Reserve one wheel/wedge for garnish and set the other aside for squeezing.

3

Add ice and gin

Discard any ice/water used to chill the glass. Fill the chilled glass with 6 large ice cubes so the glass is nearly full. Pour 2 fl oz (60 ml) of cold London dry gin over the ice.

4

Squeeze lime

Squeeze the reserved half lime (or half of the half if using a whole lime) gently over the gin to release a small amount of fresh juice into the glass, then drop the squeezed wedge or wheel into the drink if you like.

5

Add tonic

Slowly pour 4 fl oz (120 ml) of chilled tonic water down the side of the glass or over the back of a spoon to preserve carbonation and produce a bright effervescence. Pour gently to maintain bubbles.

6

Optional bitters

If using, add 1 dash of aromatic bitters on top of the drink for extra aromatic complexity. Do not stir vigorously.

7

Garnish and serve

Give the drink one gentle stir (1–2 turns) to integrate the lime and gin with the tonic without losing carbonation. Garnish with the lime wheel or wedge on the rim or floated on top. Serve immediately with a straw or long stirrer if desired.
