Preheat and prepare

Preheat the oven to 500°F (260°C) with a baking stone or an inverted heavy baking sheet on the middle rack for at least 30 minutes so it is thoroughly hot.

Shape dough

On a lightly floured surface, stretch or roll the dough into a roughly 10x14 inch (or desired) oval/rectangle about 1/4 inch thick. Transfer the shaped dough to a piece of parchment paper or a lightly oiled baking peel.

Mix 2 tbs extra-virgin olive oil with the minced garlic, 1 tsp coarse salt and 1/2 tsp black pepper. Brush this garlic oil evenly over the dough surface, leaving a 1/4-inch edge to crisp.

Dock the dough lightly with a fork in a few places to prevent large bubbles during baking.

Slide the dough on the parchment onto the preheated stone or sheet and bake 8–10 minutes, or until the edges are golden and the base is set but not overly crisp—you want a slightly sturdy base that will hold toppings. Remove from oven and leave parchment beneath.

Tomato Topping

While the dough preheats and bakes, combine the diced tomatoes, thinly sliced red onion, chiffonaded basil, 1 tsp lemon juice (or vinegar), 1/2 tsp salt, and 1/4 tsp black pepper in a bowl. Toss gently and let sit 5–10 minutes to macerate and release juices. If the mixture seems excessively watery, drain off 1–2 tbs of liquid so the flatbread won’t get soggy.

After the partially baked crust comes out of the oven, spoon the tomato-onion mixture evenly over the surface, spreading to the edges but not overhanging. Return to the oven and bake an additional 3–5 minutes to warm the topping and finish crisping the crust.

Finishing & Garnish

Remove the flatbread from the oven and transfer to a cutting board. Immediately brush or dot the surface with 2 tbs basil pesto, spreading lightly—this will melt slightly into the warm tomato mixture.

Top evenly with the arugula (2 cups) so it wilts slightly from the residual heat and provides peppery freshness.

Scatter 1/2 cup grated or shaved grana padano over the arugula. Sprinkle flaky sea salt (about 1/4 tsp) and optional red pepper flakes if using.

Finish by drizzling balsamic reduction in a thin zigzag across the flatbread (about 3 tbs). Let the flatbread rest 1–2 minutes so flavors meld.

Slice into 6–8 pieces and serve immediately.
