Prepare ingredients
Chill your rocks glass by filling with ice and setting aside. If rimming, place salt on a small plate. Run a lime wedge around the glass rim and dip lightly in salt; set glass aside.
Combine
Add 2 oz Clase Azul Reposado, 0.75 oz fresh lime juice, 0.5 oz agave nectar, 0.5 oz orange liqueur, 2 dashes orange bitters, and 0.5 egg white (if using) to a cocktail shaker.
Dry shake (if using egg white)
If using egg white, dry shake (no ice) vigorously for 15–20 seconds to emulsify and create foam.
Shake with ice
Add a generous handful of ice to the shaker and shake hard for 10–15 seconds until well chilled (shake longer if you didn’t dry shake).
Strain
Discard ice from the chilled rocks glass. Strain the cocktail over a large ice cube in the glass using a Hawthorne or fine mesh strainer to catch foam and any small ice shards.
Finish
Express an orange twist over the drink by pinching it to release oils, then rub the rim with the twist and drop it into the glass. Garnish with a lime wheel or wedge on the rim.
Serve
Serve immediately while cold. Sip slowly to enjoy the smooth, caramel and vanilla notes of Clase Azul Reposado balanced by bright citrus and a touch of sweetness.
Cleanup
Rinse shaker and tools promptly to avoid residue buildup from agave or egg white. Store bottle upright in a cool, dark place.
