In a small bowl combine mayonnaise, ketchup, Dijon mustard, apple cider vinegar, garlic powder, smoked paprika, hot sauce, salt, and black pepper. Whisk until smooth and fully combined. Taste and adjust seasoning—add a touch more vinegar for brightness or more hot sauce for heat. Refrigerate while preparing the sandwich so flavors meld (at least 15 minutes).

Flatten and season chicken

Place each chicken breast between two pieces of plastic wrap or in a resealable bag. Using a meat mallet or rolling pin, pound the chicken to an even thickness of about 1/2 inch so it cooks evenly. Pat dry with paper towels. Season both sides evenly with 1/2 tsp salt and 1/2 tsp black pepper.

Cook bacon

Heat a skillet over medium heat. Add the bacon strips and cook until crisp, about 3–5 minutes per side depending on thickness. Transfer cooked bacon to a paper towel–lined plate to drain.

Cook chicken

In the same skillet (drain excess bacon fat, leaving about 1 tsp, or wipe skillet and add olive oil), heat 1–2 tbs olive oil over medium-high heat until shimmering. Add the flattened chicken breasts and cook 3–4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). If using thicker breasts, reduce heat slightly and cover for 1–2 minutes to finish through. During the last 1 minute of cooking, place one slice of cheddar on each breast, cover the pan, and allow cheese to melt.

Assemble Sandwich

Lightly toast the sesame buns: spread about 1/2 tbs softened butter on the cut side of each bun. Place buns, buttered side down, in a clean skillet or on a griddle over medium heat and toast until golden, about 1–2 minutes.

Spread 1 heaping tbs of the chilled signature sauce on the bottom half of each toasted bun.

Place one cheesy chicken breast on each sauced bottom bun. Top each chicken with two slices of cooked smoked bacon.

If using, add two leaves of lettuce and two tomato slices on top of the bacon. Spread an additional 1 tbs signature sauce on the top bun and close the sandwich.

Press gently, slice in half on a diagonal if desired, and serve immediately.
