Chill glass

Optional but recommended: place the wine glass in the fridge or freezer for 5–10 minutes, or fill it with ice while preparing ingredients to chill it.

Add ice

Fill the chilled wine glass generously with ice cubes until nearly full. The large volume of ice keeps the drink cold and prevents it from diluting too quickly.

Measure Aperol

Pour 3 tablespoons (about 45 ml) of Aperol over the ice. For a more precise classic ratio (3:2:1 by volume), you can use 60 ml Aperol — this recipe uses a slightly lighter 45 ml measure for approachability.

Add Prosecco

Slowly pour 90 ml (about 3 oz) of chilled prosecco into the glass. Pour gently down the side of the glass or over the back of a bar spoon to minimize foaming and preserve the bubbles.

Top with soda

Add 30 ml (about 1 oz) of chilled soda water to top the drink. Adjust to taste if you prefer it slightly more or less effervescent.

Lightly stir

Using a bar spoon, give the drink one or two gentle turns to combine Aperol, prosecco, and soda without flattening the bubbles.

Garnish and serve

Garnish with one fresh orange slice placed on the rim or floated in the drink. Serve immediately while cold and fizzy.

Use a jigger to measure Aperol and prosecco for consistency. A bar spoon helps pour prosecco gently and stir without losing carbonation.
