Rinse the short-grain rice under cold water in a fine-mesh sieve or bowl, swirling and draining until the water runs nearly clear (about 3–4 rinses). This removes excess surface starch and prevents gummy rice.

Combine the rinsed rice and 1 2/3 cups water in a medium saucepan. Let sit 20–30 minutes (optional) for improved texture, then bring to a gentle boil over medium-high heat.

Once boiling, reduce heat to low, cover, and simmer for 15 minutes without lifting the lid. After 15 minutes, remove from heat and let steam, covered, for another 10 minutes.

While rice cooks, mix rice vinegar, sugar, and salt in a small bowl until sugar dissolves. Warm slightly if needed to help dissolve.

Transfer cooked rice to a large shallow bowl or wooden hangiri if available. Pour the vinegar mixture over the hot rice and fold gently with a spatula or wooden paddle to combine and fan the rice to cool to near room temperature. Avoid mashing; you want distinct, glossy grains. Cover with a damp towel to keep moist while preparing the tuna.

Trim the ahi tuna of any sinew and pat dry with paper towels. Using a very sharp knife, slice the fish into 1/4-inch cubes for poke-style or into 1/8–1/4-inch slices if you prefer sashimi-style presentation.

In a medium bowl combine soy sauce, sesame oil, rice vinegar, honey, lime juice, and optional crushed red pepper or sriracha. Whisk until well combined.

Add the sliced or cubed tuna to the marinade, add the sliced scallions, toasted sesame seeds, and kosher salt. Gently toss to coat. Marinate for 5–10 minutes in the refrigerator — just long enough to season the tuna without cooking it from the citrus or salt.

Sushi Rice Bowls (Chirashi-style)

Divide the prepared sushi rice between 2–3 shallow bowls (this recipe yields about 2 generous or 3 moderate servings). Top each bowl with marinated ahi tuna, arranging the fish attractively on one side.

Optional Roll Assembly

To make simple maki-style rolls: lay a nori sheet shiny-side down on a bamboo mat, spread about 1/3 cup sushi rice in a thin layer leaving a 1-inch border at the far edge, add a line of avocado and cucumber and a few tablespoonfuls of marinated tuna. Roll tightly, sealing the edge with a little water. Slice into 6–8 pieces with a wet sharp knife.

Garnish either bowls or rolls with additional toasted sesame seeds, pickled ginger, small dollops of wasabi, microgreens or cilantro, and lime wedges. Serve immediately with extra soy sauce on the side.
