Method
Prepare Chicken
Pound and Trim
If the chicken breast is uneven or very thick on one side, place it between two sheets of plastic wrap and gently pound with a meat mallet or rolling pin to an even thickness of about 1/2 inch. Trim any excess fat. You should have one portion weighing 5 oz.
Pat Dry
Pat the chicken dry on both sides with paper towels. Dry surface helps with browning.
Season
Place the chicken on a plate and season both sides evenly with kosher salt (about 1/2 tsp per side total), black pepper, garlic powder, and smoked paprika. Gently press the seasonings into the meat so they adhere.
Cook
Preheat Pan
Heat a 10-12 inch nonstick or stainless-steel skillet over medium-high heat for 1–2 minutes until hot but not smoking.
Add Oil
Add 1 tablespoon olive oil to the hot pan and swirl to coat the surface.
Sear Chicken
Place the seasoned 5 oz chicken breast in the pan. Let it sear undisturbed for 3–4 minutes until a golden-brown crust forms. Resist moving it so it browns properly.
Flip and Finish
Flip the chicken and reduce heat to medium. Add 1 teaspoon unsalted butter to the pan, tilting the pan slightly and spooning the melted butter (and pan juices) over the top of the chicken for 1–2 minutes. Continue cooking until the internal temperature reaches 165°F (74°C) when checked with an instant-read thermometer; this should take about 3–4 more minutes depending on thickness.
Finish & Serve
Rest
Transfer the chicken to a plate and let it rest for 3–5 minutes. Resting allows juices to redistribute and keeps the breast moist.
Finish
While the chicken rests, stir 1 teaspoon fresh lemon juice into the pan juices and spoon this mixture over the chicken. Sprinkle with 1 tablespoon chopped fresh parsley for color and freshness.
Slice and Serve
Optionally slice the chicken against the grain into 1/4-inch slices and serve whole or sliced. Serve immediately.
