Method
Tostada shells & tortillas
Prepare shells
If using store-bought tostada shells, warm them in a 350°F (175°C) oven for 5–7 minutes until crisp. If using small corn tortillas, heat oil in a 10–12 inch skillet over medium-high heat. Test oil by dropping a tiny bit of tortilla — it should sizzle. Fry tortillas one or two at a time 45–60 seconds per side until golden and crisp. Transfer to a paper towel-lined plate and immediately sprinkle with 1 tsp salt; set aside.
Protein (spiced ground beef)
Cook aromatics and brown meat
Heat a large skillet over medium-high heat. Add the ground beef and break it up with a spoon. Cook 4–5 minutes until it starts to brown. Add the chopped onion and cook 3–4 minutes until softened. Stir in the minced garlic and cook 30–45 seconds until fragrant.
Season and simmer
Reduce heat to medium. Add the tomato paste, chili powder, ground cumin, smoked paprika, oregano, salt, and black pepper. Stir to coat the meat and cook 1–2 minutes to bloom the spices. Pour in 1/2 cup broth (or water), scrape any browned bits from the pan, and simmer gently 4–6 minutes until mixture thickens slightly. Taste and adjust salt/heat. Stir in lime juice and chopped cilantro. Keep warm off the heat.
Fresh toppings
While the meat cooks, prepare the toppings: wash and shred the lettuce, quarter or dice the cherry tomatoes, thinly slice the red onion and jalapeño, and slice the avocado. Keep ingredients refrigerated until assembly so they remain crisp.
Cheese & dairy
If using sour cream and lime zest, stir lime zest into the sour cream (or crema) to make a quick lime crema. Taste and add a pinch of salt if needed. Crumble the queso fresco or cotija and set aside for sprinkling.
Salsa & garnish
Warm salsa lightly if desired. Slice lime into wedges for serving and pick the cilantro leaves from stems for garnish.
Assembly (make tostadas and tacos)
Assemble tostadas
Place a crisp tostada shell on a plate. Spread about 1–2 tablespoons of lime crema on the shell. Spoon 3–4 tablespoons of the spiced ground beef evenly over the crema. Top with a small handful (about 1/3 cup) shredded lettuce, a spoonful of tomatoes, a few slices of red onion and jalapeño (if using), and a few avocado slices. Sprinkle 1–2 tablespoons crumbled queso fresco on top, add a drizzle of salsa and optional hot sauce, and garnish with cilantro. Serve immediately with a lime wedge.
Assemble tacos
Warm 2 small corn tortillas (or leftover shells) and place on a plate. Divide remaining spiced beef between two tortillas (about 3–4 tablespoons each). Top with shredded lettuce, tomatoes, onion, avocado, a spoonful of salsa, a dollop of crema, and a sprinkle of queso fresco and cilantro. Serve with lime wedges.
Repeat assembly until all shells and tortillas are used. Store any leftover components separately (meat refrigerated up to 3 days, shells in an airtight container) for best texture.
