Prep

Finely chop 1/2 cup yellow onion and mince 2 garlic cloves. Measure out spices: 2 tsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, 1/2 tsp oregano, 1 tsp kosher salt and 1/2 tsp black pepper.

Cook onions and garlic

Heat 1 tsp vegetable oil in a large skillet over medium heat until shimmering. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 3–4 minutes. Add minced garlic and cook 30 seconds until fragrant.

Brown the beef

Increase heat to medium-high and add 1 lb ground beef to the skillet. Break it up with a spatula and cook until no longer pink, about 6–8 minutes. Drain excess fat if desired, leaving a tablespoon of fat for flavor (or keep all for juicier filling).

Season and simmer

Reduce heat to medium, stir in 1 tbsp tomato paste and the measured spices. Toast the spices with the beef for 30–60 seconds. Pour in 1/2 cup beef or chicken broth (or water), stir to combine, and simmer gently until the mixture thickens, about 4–6 minutes. Taste and adjust salt/pepper. Stir in 1 tbsp fresh lime juice off the heat.

Warm tortillas just before serving so they stay pliable. Heat a dry skillet over medium-high heat. Lightly brush each tortilla with a little butter or oil (1 tsp total divided) and warm 30–45 seconds per side until lightly charred spots appear. Keep wrapped in a clean kitchen towel or in a tortilla warmer to stay warm.

Toppings

Prepare toppings while the filling simmers: shred 1 cup lettuce, dice 1/2 cup tomato, finely chop 1/4 cup cilantro and 1/4 cup onion, shred 3/4 cup cheese, slice 4 radishes if using, and cut 2 lime wedges. Place toppings in small bowls for assembly.

Assemble tacos: place about 2–3 tablespoons of the warm beef mixture in each tortilla (adjust to preference). Top with shredded lettuce, tomato, onion, cilantro, cheese, a dollop of sour cream, sliced radishes and a squeeze of lime. Add salsa or hot sauce to taste.
