Prepare shrimp
If shrimp are frozen, thaw completely under cold running water or in the refrigerator overnight. Peel and devein the shrimp if not already done, leaving tails on or off per preference. Pat shrimp very dry with paper towels.
Make marinade
In a medium bowl combine 2 tablespoons olive oil, 2 tablespoons lemon juice, minced garlic, smoked paprika, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper. Whisk to homogenous.
Marinate
Add the dried shrimp to the bowl and toss until evenly coated. Cover and refrigerate for 15–30 minutes. Do not marinate longer than 30 minutes for best texture (acid and salt can firm/shrink shrimp).
Cook shrimp
Heat a large skillet over medium-high heat until hot. Add the marinated shrimp in a single layer (discard excess marinade or reserve to spoon over at the end). Cook shrimp 1.5–2 minutes per side, turning once, until pink and opaque with a slight curl. Avoid overcooking.
Finishing and garnish
Finish in butter
Lower heat to medium, add 1 tablespoon butter to the pan and swirl until melted and coating the shrimp, about 30 seconds. Tilt the pan and spoon the buttery pan juices over the shrimp for extra flavor.
