Crack and beat
Crack the 4 large eggs into a medium bowl. Add 2 tablespoons of whole milk, 1 teaspoon of salt, and 1 teaspoon of black pepper. Using a fork or a whisk, beat vigorously until the yolks and whites are fully combined and the mixture is slightly frothy (about 20–30 seconds). This adds air for softer curds.
Cooking
Preheat pan
Place a nonstick or well-seasoned skillet over medium-low heat. Add 1 tablespoon of unsalted butter and 1 teaspoon of neutral oil (if using) to the pan. Allow the butter to melt and foam but not brown — the pan should be hot enough that the butter is fully melted and just starting to quiet down, about 1 minute.
Cook eggs slowly
Pour the beaten eggs into the warm pan. Let them sit undisturbed for about 10 seconds until the edges begin to set. Using a silicone spatula, gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue gently folding and pushing the eggs every 10–15 seconds. Keep the heat at medium-low to avoid browning; the goal is soft, creamy curds. This process should take about 3–5 minutes.
Finish off-heat
When the eggs are mostly set but still slightly glossy and a little runny (there will still be a small amount of liquid egg), remove the pan from heat. The residual heat will finish cooking them. Give one or two gentle folds to combine the remaining liquid into soft curds. Total carryover cooking will take about 30–60 seconds.
Finishing
Season and serve
Taste and adjust seasoning if needed. Sprinkle 1 tablespoon finely chopped fresh chives and 2 tablespoons grated cheese over the eggs if using. Gently fold to distribute. Serve immediately while warm.
