Prepare and Warm Lobster
If lobster meat is chilled, pat dry with paper towels. In a small skillet over low heat, melt 1 tablespoon unsalted butter. Add lobster meat and gently warm for 1–2 minutes just to take the chill off — do not overcook. Stir in 1 teaspoon lemon juice, 1 teaspoon salt, 1 teaspoon freshly ground black pepper, and 1 tablespoon chopped parsley. Keep warm while you make the beef sauce.
Beef Sauce
Brown the beef
Increase heat to medium-high. Add 8 oz ground beef to the pan, breaking it into small pieces with a spatula. Cook until browned with no pink remaining, about 6–8 minutes. Drain excess fat if the pan is very greasy, leaving a tablespoon for flavor.
Build the sauce
Stir in 1 tablespoon tomato paste and cook 1–2 minutes to caramelize the paste. If using, pour in 2 tablespoons dry red wine to deglaze the pan, scraping up browned bits; simmer until wine reduces by half, about 1–2 minutes. Add 1/2 cup beef stock, 1 teaspoon Worcestershire sauce, 1 teaspoon soy sauce, 1/2 teaspoon dried thyme and 1 bay leaf. Bring to a gentle simmer.
Simmer and season
Reduce heat to medium-low and simmer the sauce, uncovered, until it slightly thickens, about 8–10 minutes. Taste and adjust seasoning with 1/2 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Remove and discard the bay leaf.
Finish the sauce
If you prefer a richer, silkier sauce, stir in 2 tablespoons heavy cream off heat (optional). Warm through for 1 minute, then remove from heat.
Assembly & Serve
Place 2 cups of your chosen base (pasta, mashed potatoes, or toasted bread) on serving plates or a platter. Spoon the warm beef sauce over the base in an even layer.
Garnish with 1 tablespoon chopped chives or parsley and serve with lemon wedges. Encourage diners to squeeze lemon over the lobster to brighten flavors.
