Salsa Ranchera
Roast or simmer tomatoes
Halve the tomatoes and place them in a dry skillet over medium-high heat. Cook, turning occasionally, until the skins are blistered and tomatoes have softened (about 8–10 minutes). Alternatively, simmer whole tomatoes in a pot of water for 6–8 minutes until skins split, then drain.
Blend and season
Transfer the roasted or softened tomatoes, cooked onion mixture, ground cumin, salt and pepper to a blender or use an immersion blender. Pulse to a slightly chunky consistency (you want some texture). Taste and adjust seasoning. Transfer salsa back to skillet and simmer over low heat 4–6 minutes to meld flavors. Stir in chopped cilantro and lime juice off the heat.
Tortillas and Eggs
Warm/refry tortillas
In a large skillet, heat 2 tablespoons vegetable oil over medium-high heat. Fry each corn tortilla about 20–30 seconds per side just until pliable and slightly blistered (for a crisp edge fry longer to desired texture). Drain briefly on paper towels. Alternatively, warm tortillas directly on a gas flame or comal until soft and slightly charred.
Heat refried beans
Warm the 1 cup refried beans in a small saucepan over low heat, stirring occasionally, until smooth. If too thick, add 1–2 tablespoons water to loosen.
Cook eggs (sunny-side up)
Reduce skillet heat to medium-low and wipe out any excess oil if needed. Add 1 teaspoon butter (optional) and crack eggs into the skillet, spacing them evenly. Cook gently until whites are set but yolks remain runny, about 3–4 minutes for sunny-side up. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. If you prefer firmer yolks, cover skillet for 30–60 seconds or flip for over-easy.
Assembly & Garnish
Spread about 1/4 cup warmed refried beans in the center of each warmed tortilla and spread into a thin layer. Place a tortilla on a plate (you can stack two tortillas per serving if desired for sturdiness).
Spoon 1/3 to 1/2 cup of the warm salsa ranchera over the bean layer on each tortilla.
Carefully place a cooked egg on top of each sauced tortilla.
Top each plate with crumbled queso fresco (about 1–2 tablespoons), sliced avocado, pickled red onion, and a sprinkle of fresh cilantro. Serve immediately with lime wedges and hot sauce on the side.
Repeat for all four tortillas and serve hot.
