Prepare marinades and fillings
Make a versatile sauce by combining 4 tbs soy sauce, oyster sauce, 1 tbs sesame oil, 2 tbs brown sugar, 1 tbs rice vinegar, 1 tsp grated ginger and 1 tsp minced chili paste (optional). Reserve 1/3 cup of this mixture for glazing later. Separate the remainder for use in fillings and marinades.
Marinate boneless ribs
Place the boneless pork ribs strips in a bowl. Add 2 tbs soy sauce, 1 tbs of the prepared sauce, 1/2 tsp salt and 1/2 tsp black pepper. Toss to coat, cover and refrigerate at least 30 minutes (up to 2 hours) so flavors penetrate.
Make pork strip filling
Heat 1 tbs oil in a skillet over medium-high heat. Add 1 minced garlic and half the sliced green onion; cook 30 seconds until fragrant. Add the ground pork and cook, breaking up with a spatula, until just browned (about 5–6 minutes). Stir in 1 tbs soy sauce, 1 tbs oyster sauce, 1/2 tbs brown sugar and 1/2 cup shredded cabbage. Cook 2 minutes until cabbage softens. Taste and season with a pinch of salt and pepper. Remove from heat and let cool to room temperature.
Assemble egg rolls
Lightly beat the egg. Lay an egg roll wrapper diamond-shaped. Place about 2–3 tbs of the cooled pork filling in the lower-third of the wrapper. Top with a small amount (1–2 tbs) of julienned carrot and a sprinkle of green onion. Brush wrapper edges with beaten egg, fold the bottom corner over the filling, fold in both sides, then roll tightly away from you to seal. Repeat until all wrappers and filling are used (makes about 8–12 egg rolls depending on filling). Keep wrapped egg rolls on a tray, seam-side down.
Prep chicken wings
Pat the wings dry. In a bowl whisk together 4 tbs cornstarch, 2 tbs flour, 1 tsp baking powder, 1/2 tsp salt and 1/4 tsp black pepper. Add the wings and toss to coat evenly. Let rest 10 minutes so coating adheres.
Preheat oil
Pour about 1"–1.5" of vegetable oil into a heavy skillet or Dutch oven (about 1 cup) and heat over medium-high until oil reaches 350°F (175°C) or until a small piece of batter sizzles on contact.
Fry boneless ribs
Working in batches, dredge the marinated boneless rib strips in 2 tbs cornstarch to lightly coat. Fry strips 2–3 minutes per side until golden and cooked through (internal temperature 145°F / 63°C). Remove to a wire rack or paper towel–lined plate to drain.
Fry chicken wings
Fry the coated wings in batches for 8–10 minutes, turning occasionally, until skin is crisp and juices run clear (internal temp 165°F / 74°C). Drain on a rack or paper towels. Immediately toss the hot wings with the reserved 1/3 cup sauce mixed with 2 tbs honey and 2 tbs ketchup to glaze. Taste and add a splash of soy or more honey if needed.
Fry egg rolls
Carefully fry egg rolls seam-side down in batches for 3–4 minutes, turning occasionally, until wrappers are deep golden and crisp. Remove and drain on paper towels. Keep warm in a low oven (200°F/95°C) if needed.
Finish and plate
Briefly reheat the fried boneless rib strips in the hot oil for 30–45 seconds if they cooled too much, or toss them in a small saucepan with 1–2 tbs of the reserved sauce to glaze lightly. Arrange egg rolls, glazed wings and boneless rib strips on a platter. Garnish with remaining sliced green onion and lime wedges. Serve immediately with optional dipping sauces (soy sauce, sweet chili or plum sauce).
Notes
All components share the same flavor base so tastes are cohesive. Cook in batches to avoid overcrowding the oil. Ensure fillings are cool before rolling to prevent soggy wrappers. Total active frying time depends on batch size.
