Prepare vegetables
Wash and finely shred the napa cabbage. Place shredded cabbage in a large bowl, sprinkle with 1/2 teaspoon salt, toss and let sit 5 minutes. Squeeze out excess moisture using a clean kitchen towel or paper towels. Combine drained cabbage with grated carrot and sliced green onions in a bowl and set aside.
Cook the meat
Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add ground pork and break up with a spatula. Cook until no longer pink and starting to brown, about 4–6 minutes.
Aromatics & seasoning
Push meat to the side and add minced garlic and grated ginger to the hot pan for 30 seconds until fragrant, then stir into the meat. Add 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil, 1/2 teaspoon white pepper, and 1/2 teaspoon salt (adjust to taste). Stir to combine.
Combine & thicken
Add the drained cabbage/carrot/green onion mixture to the pan. Stir-fry together 2–3 minutes until vegetables are softened and most moisture has evaporated. Sprinkle 1 tablespoon cornstarch over the mixture and stir; the cornstarch will help bind the filling. Taste and adjust seasoning. Remove from heat and let filling cool to room temperature (about 15 minutes) before wrapping.

Make sealing slurry
In a small bowl, whisk 2 tablespoons all-purpose flour with 3 tablespoons water until smooth to form a paste. This will act as the glue to seal egg rolls.
Assemble egg rolls
Place one egg roll wrapper on a clean surface with a corner pointing toward you (diamond orientation). Spoon about 2 to 3 tablespoons of cooled filling (adjust to wrapper size) onto the lower third of the wrapper, creating a log shape but leaving about 1/2 inch border at each side. Fold the bottom corner up over the filling, tuck in both side corners snugly, then roll tightly toward the top corner. Brush a thin line of the flour slurry along the top corner to seal. Repeat with remaining wrappers and filling. You should get about 12 egg rolls.
Rest before frying
Place assembled egg rolls seam-side down on a baking sheet. Let them rest 10 minutes so the slurry sets; this reduces unwrapping during frying.

Heat oil
Pour 3 to 4 cups neutral oil into a large heavy-bottomed skillet or Dutch oven to a depth of about 1 to 1.5 inches. Heat over medium-high until oil temperature reaches 350°F (175°C) or a small piece of wrapper sizzles immediately but doesn't burn.
Fry egg rolls
Fry egg rolls in batches (do not overcrowd) seam-side down first for a minute to set, then turn occasionally so they brown evenly. Fry each batch about 4–6 minutes until evenly golden brown and crisp. Use tongs to turn gently. If you don't have a thermometer, maintain medium-high heat and adjust if they brown too quickly (lower heat) or take too long (increase heat slightly).
Drain
Remove egg rolls to a wire rack set over a baking sheet or paper towels to drain excess oil. Let cool 2–3 minutes before serving so filling firms slightly and is safe to eat.
Optional Dipping Sauce
Whisk together 1/4 cup soy sauce, 2 tablespoons rice vinegar, 1 teaspoon honey (or sugar) and 1 teaspoon chili garlic sauce if using. Sprinkle with sesame seeds. Adjust balance to taste (more vinegar for tang, more honey for sweetness). Serve in small bowls alongside hot egg rolls.
