Savory Base
Sauté aromatics
Heat a large skillet over medium heat. Add olive oil and warm until shimmering (about 30 seconds). Add diced onion and sauté 4–5 minutes until softened and translucent. Stir in minced garlic and cook 30–45 seconds until fragrant.
Brown the protein
Add ground beef (or plant-based alternative) to the pan. Break up with a spatula and cook 6–8 minutes until browned and cooked through. Drain excess fat if desired, leaving about 1 tablespoon in pan for flavor.
Season and combine
Stir smoked paprika and ground cumin into the meat. Add soy sauce and tomato paste, stirring to coat evenly. Cook 1–2 minutes to develop flavors. Fold in black beans and corn, heat through 2–3 minutes. Taste and adjust salt/pepper as needed.
Crazy Sauce
While the savory base cooks, whisk together mayonnaise, sriracha, honey, lime juice, chopped cilantro, and 1/2 teaspoon salt in a medium bowl until smooth. Taste and adjust heat or sweetness to preference. Refrigerate until ready to serve.

Place crushed tortilla chips in a shallow bowl. Shred cheese if not pre-shredded. Dice avocado and slice jalapeños and green onions. Have cilantro leaves and lime wedges ready.
Assemble the Crazy Combo
On a large serving platter or individual plates, spread a layer of crushed tortilla chips (about 1/2 cup per serving). Spoon a generous portion of the savory beef-and-bean mixture over the chips. Drizzle 2–3 tablespoons of Crazy Sauce on each portion. Sprinkle shredded cheese over the hot mixture so it melts slightly. Scatter diced avocado, pickled jalapeños, green onions, and cilantro leaves on top. Add additional crushed chips for extra crunch if desired.
Optional fried eggs
If using, heat 1 tablespoon oil in a small nonstick skillet over medium-high. Crack eggs into the pan and cook until whites are set and edges are crisp, about 2–3 minutes for runny yolks or longer for firm yolks. Place eggs atop each assembled portion.
Finish and serve
Serve immediately with lime wedges and extra Crazy Sauce or hot sauce on the side. Encourage diners to squeeze lime over the dish before eating.
