Prepare cheese
In a bowl combine shredded cheddar and Monterey Jack cheeses. Toss gently to mix evenly so each quesadilla will have a balanced melt.
Butter tortillas
Spread about 1/2 tablespoon of softened butter on one side of each tortilla (the buttered side will be the outside that contacts the skillet). Reserve remaining butter for the second batch if needed.
Assemble and cook (first quesadilla)
Place one buttered-side-down tortilla in the hot skillet. Sprinkle about 3/4 cup of the mixed cheeses evenly over the tortilla, leaving a 1/4-inch border. Lightly season the cheese with a pinch of salt and a small grind of black pepper. Top with a second tortilla, buttered side up. Cook 2–3 minutes until the bottom tortilla is golden brown and cheese begins to melt.
Flip and finish
Using a wide spatula, carefully flip the quesadilla and cook the other side 1.5–2 minutes until golden brown and the cheese is fully melted. Press gently with the spatula to encourage even contact and melting. If the exterior browns too quickly before the cheese melts, reduce heat to medium-low and cover the skillet briefly (30–60 seconds) to trap heat.
Rest and slice
Transfer the cooked quesadilla to a cutting board and let rest 1 minute so the cheese sets slightly. Using a sharp knife or pizza cutter, cut into 4 wedges. Repeat the assembly and cooking steps for the remaining tortillas and cheese, adding the remaining butter to the pan as needed.
Serve
Arrange quesadilla wedges on a plate and optionally garnish with sour cream, salsa, chopped cilantro, and lime wedges. Serve immediately while hot and melty.

Sour cream and salsa: place in small bowls for dipping. Cilantro and lime: sprinkle cilantro over quesadilla wedges and squeeze lime wedges over just before eating for brightness.
