Gather and measure all ingredients. Finely chop the onion, dice the red pepper, mince the jalapeño (remove seeds for less heat), and chop the cilantro. Shred cheeses if not pre-shredded.

If using bacon: cook until crispy, drain on paper towels and chop. If using raw breakfast sausage: brown in a skillet, breaking into crumbles, and drain excess fat.

Cook the vegetables

Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon of butter. When melted, add the chopped onion and diced red bell pepper. Sauté until softened and edges are lightly browned, about 5–6 minutes.

Add the minced jalapeño, 0.5 tsp ground cumin, and 0.5 tsp smoked paprika. Cook, stirring, for 30–60 seconds until fragrant. Transfer the cooked vegetables to a bowl and set aside.

Cook the eggs

In a medium bowl, crack the 8 eggs. Add 1 tablespoon whole milk, 1 teaspoon salt, and 0.5 teaspoon black pepper. Whisk until combined and slightly frothy.

Return the skillet to medium-low heat and add the remaining 1 tablespoon butter if needed. Pour in the beaten eggs and let sit briefly until edges begin to set, about 20–30 seconds.

Gently push the eggs with a spatula, folding from the edges to the center to form soft curds. When eggs are about 80% cooked (still slightly moist), fold in the sautéed vegetable mixture and the cooked meat (if using). Continue cooking just until eggs are set but still tender, about 30–60 seconds more. Remove from heat and stir in chopped cilantro and hot sauce (if using).

Assemble burritos

Warm the tortillas: heat a large dry skillet over medium heat. Lightly brush each tortilla with a little vegetable oil or butter and warm 20–30 seconds per side until pliable and lightly browned. Keep warm wrapped in a clean towel.

Lay a warmed tortilla flat. Spoon about 1/6 of the egg mixture down the center (roughly 1 to 1 1/4 cups), leaving 2 inches clear on each short end. Sprinkle with about 2–3 tablespoons each of shredded cheddar and Monterey Jack/pepper jack, and add 2–3 tablespoons salsa if desired.

Fold the short ends over the filling, then fold one long side over and tightly roll to form the burrito. Repeat with remaining tortillas and filling.

Finish & serve

Optional: For a lightly crisp exterior, place a clean skillet over medium heat and sear each burrito seam-side down for 1–2 minutes per side until golden and sealed.

Serve immediately with additional salsa, sour cream, cilantro, and hot sauce on the side. Refrigerate leftovers in an airtight container for up to 3 days or freeze individually wrapped for up to 1 month.
