Scrambled eggs
Whisk eggs
Crack the 4 eggs into a medium bowl. Add 2 tablespoons milk, 1 teaspoon kosher salt, and 1 teaspoon black pepper. Whisk vigorously until mixture is uniform and slightly frothy.
Cook eggs
Heat a nonstick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt and foam but not brown. Pour in the egg mixture. Allow eggs to set at the edges for 10–15 seconds, then gently push cooked portions toward the center with a spatula, tilting the pan to let uncooked egg run underneath. Continue folding until eggs are just set but still soft and slightly glossy, about 2–3 minutes total. Remove from heat and set aside; eggs will finish cooking in residual heat.
Filling
Precook potatoes
If using raw diced potatoes, parboil for 4–5 minutes until just tender (optional) or microwave in a covered bowl with a tablespoon water for 3–4 minutes. Drain and pat dry. This speeds skillet time and ensures tender interior.
Cook potatoes & vegetables
Heat a medium skillet over medium heat and add 1 tablespoon olive oil. Add the small-diced potatoes in a single layer. Let them cook without moving for 3–4 minutes to develop a golden crust, then stir. Add 1/4 cup chopped onion and 1/4 cup diced bell pepper. Sauté until onion is translucent and potatoes are golden, about 4–6 minutes more.
Add sausage & season
Push the potato mixture to one side of the pan and add 1/2 cup ground breakfast sausage (or chosen protein). Break it up with a spatula and cook until browned and cooked through, 4–5 minutes. Mix through with the potatoes and vegetables. Sprinkle 1/4 teaspoon cumin, 1/4 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir to combine and cook 1 more minute to bloom the spices. Taste and adjust seasoning.
Assembly & toppings
Warm tortillas
Warm 2 large flour tortillas for easier folding: heat in a dry skillet over medium for 15–20 seconds per side, or microwave covered with a damp paper towel for 15–20 seconds.
Assemble burritos
Lay a warmed tortilla flat. Spoon half the potato/sausage mixture onto the lower third of the tortilla (leave about 1–2 inches at each side). Top with half the scrambled eggs, about 6 tablespoons shredded cheddar, 2 tablespoons salsa, slices from 1/4 avocado, 1 tablespoon chopped cilantro, and a drizzle (1/2 tsp) hot sauce if using. Fold the sides over the filling, then roll from the bottom to form a tight burrito. Repeat with the second tortilla and remaining ingredients.
Grill burritos (optional)
For a crisp exterior, heat a skillet or panini press over medium and place burrito seam-side down. Press gently and cook 1–2 minutes per side until golden brown and cheese is melty. If using a skillet, rotate and press with a spatula.
Serve
Slice burritos in half on the diagonal, if desired. Serve immediately with extra salsa, avocado, cilantro, and lime wedges for squeezing.
Optional garnish
Serve with 2 lime wedges and sprinkle additional cilantro as desired for brightness.
