Prepare ribs

Remove ribs from packaging and pat dry with paper towels. Using a small knife, slide under the membrane on the bone side and peel it off; discard membrane. Trim any excess fat and silver skin.

Season base

Lightly rub the entire rack with olive oil and yellow mustard to help the rub adhere. Sprinkle kosher salt and freshly ground black pepper evenly over both sides.

Make the rub

In a small bowl combine brown sugar, smoked paprika, garlic powder, onion powder, ground cumin, dry mustard, ground coriander and cayenne. Mix until uniform.

Apply rub

Generously coat both sides of the ribs with the dry rub, pressing it into the meat so it adheres. If time allows, wrap the rubbed ribs in plastic and refrigerate for 2–6 hours or overnight to develop flavor (optional).

Low-and-slow Bake or Grill

Set up cooking method

Preheat oven to 275°F (135°C) for oven method. For grill/ smoker, set to indirect heat at 225–275°F (107–135°C). Prepare a drip pan with a little water or apple juice to keep humidity.

Cook ribs

Place ribs bone-side down on a rack set over a rimmed baking sheet (oven) or on the cool side of the grill (indirect). Cook low and slow: about 2.5–3 hours for 2 lb racks in the oven, or 3–4 hours on the grill/smoker, until meat is tender and has pulled back about 1/4–1/2 inch from the bone tips.

Check doneness

Test tenderness by inserting a toothpick between the bones or by bending the rack — it should bend and the meat will begin to crack slightly when ready. Internal temperature should be about 190–203°F (88–95°C) for tender ribs.

Make sauce

While ribs near completion (last 20–30 minutes), combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, honey, hot sauce (if using) and water in a small saucepan. Warm over medium-low heat, stirring, until sugar dissolves and sauce is glossy, 5–7 minutes. Taste and adjust seasoning.

Glaze ribs

Brush a generous layer of warm barbecue sauce onto the top of the ribs. Return to the oven or grill for 10–15 minutes to set the glaze, brushing once more halfway through. Watch to avoid burning—reduce heat or move away from direct flame if sauce chars.

Finishing & Serving

Rest and slice

Remove ribs from heat and let rest for 10 minutes on a cutting board. Slice between the bones into individual portions using a sharp knife.

Plate

Sprinkle chopped parsley over the sliced ribs and serve with lemon wedges on the side. Offer extra barbecue sauce if desired.
