Saltfish (reconstitute & prepare)
Rinse and soak
Rinse the dried saltfish under cold running water. Place it in a large bowl and cover with cold water. Soak for 2–8 hours in the refrigerator, changing the water once or twice. Shorter soak for moderately salty fish; longer soak to remove more salt.
Boil and flake
Drain the soaking water and place the saltfish in a medium saucepan. Cover with fresh water (about 4–6 cups) and add the bay leaf. Bring to a gentle boil, then reduce heat and simmer 15–20 minutes until tender. Drain, let cool slightly, remove any skin and bones, and flake the fish into bite-size pieces. Taste a small piece and, if still too salty, briefly rinse under cold water and pat dry.

Prepare aromatics and vegetables
While the saltfish is boiling, drain the canned ackee into a colander and let it drain well. Slice the onion thinly (about 1 cup), dice the red bell pepper (about 1 cup), thinly slice the scallions, mince the garlic, and pick thyme leaves from stems. If using a whole scotch bonnet, leave it whole to flavor without adding too much heat (pierce only if you want more heat). If using fresh ackee, ensure it is fully ripened and cooked according to safety instructions before using.
Sauté vegetables
Heat a heavy skillet or frying pan over medium heat. Add the vegetable or coconut oil and swirl to coat. Add the sliced onion and sauté 3–4 minutes until translucent. Add the garlic and cook 30 seconds until fragrant. Add the red bell pepper and scallions and sauté another 2–3 minutes until slightly softened.
Add seasoning
Stir in the flaked saltfish, thyme, pimento berries, and the whole scotch bonnet pepper. Cook and toss gently 2–3 minutes so flavors combine and saltfish warms through. Add freshly ground black pepper now. Do not add extra salt yet; the saltfish is already salty.
Fold in ackee
Lower the heat to medium-low. Gently fold the drained ackee into the pan in batches, taking care not to mash the delicate pieces. Warm the ackee through for 3–5 minutes just until heated and tender — ackee should remain soft and slightly custardy. If using diced tomato, stir it in now and cook 1–2 minutes to meld flavors. Taste and add a pinch of salt only if needed.
Finish
Remove and discard the scotch bonnet (if left whole) before serving, or leave it in for presentation with caution. Squeeze the lime or lemon juice over the ackee and saltfish and gently toss once. Adjust black pepper and salt to taste.
Serving
Transfer to a warm serving dish. Serve ackee and saltfish hot with traditional sides such as boiled green bananas, fried dumplings, provision, roasted breadfruit, boiled yams, or steamed rice. Garnish with extra sliced scallions if desired.
