In a medium bowl, combine the 1/4 cup pineapple juice, 1/4 cup rice wine vinegar, 1/3 cup soy sauce, 1.5 tsp sesame oil, and 1 tbsp sugar or honey. Whisk until sugar dissolves.

In a small cup, mix 1.5 tsp cornstarch with 1 tbsp water to make a smooth slurry; set aside.

Reserve 2 tablespoons of the prepared sauce in a separate small bowl (this can be used to baste or for extra flavor at the end).

Pat the chicken pieces dry with paper towels. Season with 1/2 tsp kosher salt and 1/4 tsp ground pepper; toss to coat evenly.

Heat a large skillet or wok over medium-high heat. Add 2 tbsp vegetable oil and swirl to coat. When oil is hot and shimmering (but not smoking), add the chicken in a single layer, leaving space so pieces sear rather than steam.

Cook the chicken, without moving too much, 3–4 minutes until the underside is golden. Stir and continue cooking another 2–3 minutes until cooked through (internal temperature 165°F / 74°C) and just barely opaque. Transfer chicken to a plate and set aside.

In the same skillet, add an extra 1 tsp oil if needed. Add the minced garlic (2 cloves) and grated ginger (1 tsp) and sauté 20–30 seconds until fragrant.

Add the carrots and broccoli first (they take longer) and stir-fry 2 minutes.

Add the red bell pepper and snap peas (or green beans) and continue stir-frying another 2 minutes, tossing frequently so vegetables remain crisp-tender.

Stir in the drained pineapple chunks and cook 1 minute to warm through and slightly caramelize the edges.

Return the cooked chicken to the skillet with the vegetables. Give the reserved sauce a quick stir and pour the remaining main sauce over the chicken and vegetables.

Bring the mixture to a simmer. Stir the cornstarch slurry briefly (it may settle) and pour it into the skillet while stirring to thicken the sauce. Cook 1–2 minutes until sauce is glossy and coats the chicken and vegetables.

Taste and adjust seasoning: add up to 1/2 tsp more sugar if too tart, or a pinch of salt if needed. If the sauce is too thick, thin with 1–2 tbsp water or extra pineapple juice.

Turn off the heat. Drizzle the reserved 2 tbsp of sauce (if using) and 1/2 tsp sesame oil for extra aroma. Toss gently to combine.

Garnish with sliced green onions and toasted sesame seeds if desired. Serve immediately over steamed rice or noodles.

Bring a large pot of salted water to a boil. Add 12 oz egg noodles and cook 1 minute less than package instructions so they are slightly underdone. Drain and rinse under cold water to stop cooking. Toss drained noodles with 2 tsp cornstarch to help crisping and prevent clumping.

Cook and crisp noodles

Heat a large nonstick skillet or flat frying pan over medium-high heat. Add 4 tbs vegetable oil and heat until shimmering but not smoking. Spread noodles in an even layer and press gently with a spatula. Fry without stirring 3–5 minutes until the underside is golden-brown and crisp. Flip sections or turn over in batches and crisp the other side 2–3 minutes. Transfer crisped noodles to a plate lined with paper towel and keep warm.

While noodles cook, julienne carrot into matchsticks (about 1 cup), thinly shred 2 cups cabbage, cut 1 red bell pepper into thin strips (about 1 cup), slice 4 scallions thinly separating white and green parts, mince 3 garlic cloves, and grate or mince 1 tbs fresh ginger.

Prep vegetables

In a large wok or skillet, heat 2 tbs vegetable oil over high heat until hot but not smoking. Add the white parts of the scallions, minced garlic and grated ginger. Stir-fry 20–30 seconds until fragrant.

Add carrot and bell pepper. Stir-fry 1–2 minutes until they begin to soften. Add shredded cabbage and continue stir-frying 1–2 minutes more until vegetables are crisp-tender. Season with 1/2 tsp salt and 1/4 tsp black pepper. Push the vegetables to the side of the wok to prepare for adding sauce.

In a bowl or measuring cup combine 3 tbs soy sauce, 1 tbs oyster sauce, 1 tsp dark soy sauce (optional), 1 tsp sesame oil, 1 tsp rice vinegar, 1 tsp sugar, and 1 cup vegetable or chicken broth. Stir to dissolve the sugar. In a small cup mix 1 tsp cornstarch with 1–2 tbs cold water to make a slurry.

Make sauce and thicken

Pour the sauce mixture into the wok with the vegetables and bring to a gentle simmer for 30–60 seconds. Stir in the cornstarch slurry and simmer 30–60 seconds until sauce thickens slightly and becomes glossy. Taste and adjust seasoning (add a splash more soy sauce for salt or a pinch more sugar if needed).

Place the crisped noodles back into the skillet on top of the sauce and vegetables, or transfer vegetables and sauce onto the plate of noodles. Gently toss or use two spatulas to combine so the sauce coats the vegetables and some of the noodles — be careful to preserve some crisp texture. Heat together 1–2 minutes until everything is hot and the noodles absorb a little sauce.

Combine noodles and sauce

Drizzle 1 tsp sesame oil over the finished dish and sprinkle toasted sesame seeds, sliced green parts of the scallions and chopped cilantro (if using). Add 1/4 tsp red pepper flakes for heat if desired. Adjust final seasoning with salt and pepper to taste.

Serve immediately so the noodles retain a combination of crisp and saucy texture.

Finely chop the shiitake mushrooms and scallions. In a medium bowl combine ground pork, mushrooms, scallions, minced garlic, grated ginger, soy sauce, oyster sauce, sesame oil, cornstarch, lightly beaten egg, salt and pepper. Mix thoroughly with a spatula or your clean hands until the mixture is cohesive and slightly sticky (about 1–2 minutes). This helps the filling hold together when frying.

Chop and mix

Taste a small pinch by cooking a tiny piece of filling in a skillet to check seasoning, if desired. Adjust salt or soy sauce lightly if needed.

Prepare a clean work surface and keep a small bowl of water nearby to act as glue for the wrappers.

Place one wonton wrapper square on the work surface with a corner facing you (diamond orientation). Spoon about 1 teaspoon (level) of filling into the center of the wrapper. Do not overfill — leaving edges clear helps seal.

Dip your fingertip into the bowl of water and lightly moisten the two adjacent edges (the bottom and right corners) of the wrapper, or moisten all edges if you prefer. Fold the wrapper in half to form a triangle, pressing out any air and sealing the edges firmly so no filling can escape.

For the classic 'purse' shape: bring the two outer corners of the triangle together, overlap slightly, and press with a little water to seal, creating a small pleat or bundle. Alternatively, leave as triangles or fold into little envelopes. Repeat with remaining wrappers and filling. You should get about 30 wontons.

Place assembled wontons on a baking sheet lined with parchment or a lightly floured plate, spacing them so they do not touch. Cover lightly with a damp towel to prevent drying while you work.

In a heavy-bottomed pot or deep fryer, pour oil to reach about 2–3 inches depth (approximately 3 cups in a 3–4 quart pot). Attach a thermometer to the side; heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of wrapper — it should sizzle and rise to the surface steadily.

Fry in small batches (6–8 wontons at a time depending on pot size) so the oil temperature remains steady. Gently slide wontons into the hot oil using a slotted spoon or spider, taking care not to overcrowd.

Fry until golden brown and crisp, about 2 to 3 minutes, turning occasionally so all sides brown evenly. Pork in small wontons is already cooked at this temperature; ensure they reach an internal temperature of 165°F (74°C) if you want to be precise.

Use a slotted spoon to transfer fried wontons to a tray lined with paper towels to drain. Repeat with remaining wontons, allowing oil to return to 350°F between batches.

If you need to keep wontons warm while frying remaining batches, place the drained wontons on a baking sheet in a single layer in a 200°F (95°C) oven for up to 20 minutes. Do not stack them or they will steam and soften.

Arrange wontons on a serving platter and serve hot with sweet chili sauce, soy-vinegar dipping sauce, or your preferred condiment. Provide extra napkins as they are freshly fried.

Leftovers: store cooled wontons in an airtight container in the refrigerator for up to 2 days. Re-crisp in a 375°F (190°C) oven for 6–8 minutes.

In a medium bowl combine 2 tbs olive oil, 2 tbs lime juice, 1 tbs soy sauce, 1 tsp chili powder, 1 tsp ground cumin, 1 tsp smoked paprika, 2 minced garlic cloves, 3 tsp salt, and 1 tsp black pepper. Whisk until well combined.

Prepare marinade

Add the thinly sliced flank steak to the marinade, toss to coat thoroughly, then cover and refrigerate for at least 30 minutes and up to 4 hours. If short on time, marinate 15 minutes at room temperature.

Marinate steak

Heat a large cast-iron skillet or heavy pan over high heat until very hot. Add 1 tbs oil (not included in marinade oil) and swirl. Remove steak from marinade, letting excess drip off, then add steak in a single layer (work in batches if necessary). Sear for 1-2 minutes per side until browned and just cooked through (medium-rare to medium). Transfer cooked steak to a cutting board and let rest 5 minutes, then slice more thinly across the grain into short strips.

Cook steak

While the steak marinates or cooks, heat 1 tbs olive oil in a separate large skillet over medium-high heat. Add the sliced red and yellow bell peppers and sliced onion. Season with 1 tsp salt and 1 tsp black pepper. Sauté, stirring occasionally, until vegetables are softened and slightly charred at the edges, about 6-8 minutes. If desired, add a pinch of extra chili powder or smoked paprika to mirror the steak seasoning.

Sauté peppers and onions

When both steak and vegetables are done, add steak strips to the vegetable skillet for 30–60 seconds just to marry flavors and warm through. Remove from heat.

Combine with steak (optional)

Warm the tortillas in a dry skillet over medium heat for about 20-30 seconds per side, or wrap in foil and heat in a 350°F (175°C) oven for 8-10 minutes. Keep them warm wrapped in a clean towel.

Warm tortillas

Place 2-3 tablespoons of the steak and vegetable mixture in the center of each warm tortilla. Top with a sprinkle of shredded cheese (about 2 tbs per taco), 1/2 tbs sour cream or crema, chopped cilantro, and pickled jalapeños if using. Finish with a squeeze of fresh lime juice from the lime wedges.

Assemble tacos

Serve immediately while hot. Provide extra lime wedges, hot sauce, and tortillas on the side. Leftover steak and veggies keep covered in the refrigerator for up to 3 days.

Combine apple cider vinegar, water, sugar, and 1/2 tsp kosher salt in a heatproof bowl or jar. Stir until sugar and salt dissolve. Add the thinly sliced red onion, press down so the onion is submerged, and let sit at room temperature for at least 20 minutes. For best flavor, refrigerate 1 hour or overnight. Drain before using.

Quick pickle

Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the diced yellow onion and cook 3–4 minutes until softened and translucent. Add the minced garlic and cook 30 seconds until fragrant. Add the ground beef, break it up with a spoon, and brown until no longer pink, about 6–8 minutes.

Cook aromatics and beef

Push the beef to the side and stir in the tomato paste, cooking 1 minute to remove raw flavor. Sprinkle in chili powder, ground cumin, oregano, smoked paprika, 1 tsp kosher salt, and a few grinds of black pepper; mix to combine. Pour in 1/2 cup beef broth or water, scrape up browned bits, reduce heat to medium-low, and simmer 4–6 minutes until slightly saucy and flavors meld. Stir in 1 tablespoon fresh lime juice, taste, and adjust salt/pepper as needed.

Season and simmer

Whisk together sour cream, mayonnaise, chopped cilantro, 1 tablespoon lime juice, and 1 teaspoon water until smooth. Season with 1/4 teaspoon kosher salt and adjust thickness with additional water or lime juice as desired. Chill until ready to use.

Warm tortillas: heat a dry skillet over medium-high heat. Warm each tortilla 20–30 seconds per side until pliable and slightly charred in spots, or wrap in foil and heat in a 300°F (150°C) oven for 10 minutes.

Assemble tacos: divide the shredded lettuce among tortillas (about 2–3 tbsp per tortilla). Spoon 2–3 tablespoons of the beef filling onto each. Top with pickled red onions, a drizzle of cilantro-lime crema (about 1 tbsp), crumbled queso fresco, and fresh cilantro leaves. Serve with lime wedges for squeezing.

Serve immediately so tortillas remain soft and filling warm. Leftover beef keeps refrigerated up to 3 days; crema and pickled onions keep up to 5 days refrigerated.

Pat chicken thighs dry and cut into 1/2-inch strips. Cut tofu into 1/2-inch strips or small cubes. Rinse shrimp and pat dry. Divide into three 150 g portions (approx.) for three different preparations: one portion chicken, one shrimp, one tofu.

Prep proteins

In a small bowl combine 1 tsp salt, 1/2 tsp black pepper, 1 tsp ground cumin, 1 tsp smoked paprika and 1 tsp chili powder. Lightly coat chicken pieces with half the spice mix (about 1/2 of total mix). Reserve remaining spice for tofu and shrimp.

Season base

Heat 1 tablespoon olive oil in a large skillet over medium-high heat until shimmering. Add chicken in a single layer and cook 4–5 minutes undisturbed until golden, then stir and cook 3–4 more minutes until internal temperature reaches 74°C (165°F). Squeeze 1/2 lime over cooked chicken, remove to a plate and tent with foil to keep warm.

Cook chicken

Wipe the skillet, add 1 tablespoon olive oil and heat over medium-high. Toss shrimp with remaining spice mix and 1/4 tsp salt. Cook shrimp 1–2 minutes per side until opaque and just curled. Squeeze 1/2 lime over shrimp, transfer to plate.

Cook shrimp

In the same skillet add 1 tablespoon vegetable oil and heat until hot. Pat tofu dry again if needed, toss tofu cubes with remaining 1/2 tsp salt and a pinch of smoked paprika. Add tofu and sear without moving 3–4 minutes per side until golden and crisp on most sides. Remove from pan and squeeze any remaining lime juice (about 1/4 lime) over tofu.

Cook tofu

Make the crema: In a bowl whisk together Greek yogurt (1/2 cup), mayonnaise (1/4 cup), minced chipotle in adobo (1 tsp), honey (1 tsp), juice of 1 lime, 1 minced garlic clove, and 2 tablespoons chopped cilantro until smooth. Season with 1/4 tsp salt and adjust to taste. Reserve 3 tablespoons for the cabbage slaw and transfer the rest to a squeeze bottle or bowl for drizzling.

Make umami drizzle for shrimp (optional): In a small bowl combine 1 tsp fish sauce, 1 tbsp soy sauce, 1 minced garlic clove and juice of 1/2 lime. Use 1–2 teaspoons of this to finish the shrimp just before serving.
